各種小麦を精選して、ロール式粉砕機にて粉砕した後、その粉砕物から採取した小麦ふすまを、ターボミルを用いて衝撃式粉砕法により粉砕した(ふすま調製工程)。こうして得られた小麦ふすまを表5、表6に示す方法で熱処理した(熱処理工程)。次に、熱処理した小麦ふすまを衝撃式粉砕機(ホソカワミクロン株式会社製、ACMパルベライザー)を用いて粉砕し、その粉砕物を目開き150μmの篩を用いて分級し、篩を通過する粒径150μm未満の微ふすま画分を分取した。この微ふすま画分をバッターミックスに配合する熱処理小麦ふすまとして用い、表5、表6の「ミックス」の欄に記載の各成分を混合して、目的とするアメリカンドッグ用バッターミックスを製造した。 [Examples C1 to C10, Comparative Example C1, Control Examples C1 to C6: Production of batter mix for corn dog]
Various types of wheat were carefully selected and pulverized by a roll type pulverizer, and wheat bran collected from the pulverized product was pulverized by an impact pulverization method using a turbo mill (a bran preparation step). In a Hobart mixer, 750 g of water and 1 kg of the batter mix to be evaluated were charged, and stirred with a beater for 1 minute at low speed to prepare a batter. The corn dogs immediately after being re-boiled were eaten by 10 expert panelists, and the flavor (greasyness), taste (acridity), and texture (crispy and roughness) were evaluated according to the above evaluation criteria. Tables 5 and 6 show the results. The numerical values in the column of "Evaluation of corn dog" in Tables 5 and 6 are the arithmetic mean values of the evaluation points of 10 expert panelists. The control for each example and comparative example in Table 5 is control C1. Also in Table 6, the control of Example C6 is Control C2, the control of Example C7 is Control C3, the control of Example C8 is Control C4, the control of Example C5 is Control C1, and the control of Example C5 is Control C1.
