Abstract

L'invention concerne un procédé de production d'un concentré de protéine de lactosérum particulaire (WPC) dans un réacteur à cisaillement élevé à flux continu (CHSR). Le procédé comprend l'utilisation d'une solution de WPC en tant qu'entrée, la recirculation de la solution de WPC dans le CHSR, et simultanément le traitement thermique et le chauffage mécanique de la solution de WPC. La chaleur appliquée à la solution de WPC est générée uniquement par l'énergie thermique créée par frottement de fluide à l'intérieur de la solution de WPC recirculée.
