In the composition for sterilization or bacteriostasis of food or the equipment that handles it or the environment in which it exists, not only the sterilization or bacteriostatic effect is important, but also the effect on safety and food flavor. It cannot be ignored. On the other hand, compositions that have been used in the field of food to control the growth of microorganisms meet the safety standards, but are difficult to form a homogeneous liquid with low water solubility. Often difficult to use. Furthermore, emulsifiers and acids are often used in conventional food preservative compositions, but in general emulsifiers have a strong bitter taste, and acids have a sour taste. If these remain in equipment after washing and sterilization, the flavor of food may be affected. On the other hand, if the amount of the composition used is limited in consideration of the flavor of the food, sufficient sterilization or bacteriostatic effect may not be obtained. Therefore, sterilization of food, or the equipment in which it is handled, or the environment in which it exists, which has a homogeneous liquid and has a high bactericidal or bacteriostatic effect but has little bitterness or sourness and does not affect the flavor of food. There is a need for compositions useful for bacteriostasis.
Furthermore, it is also desirable for devices that handle food to maintain a sterilized state not only immediately after sterilization but also during the use of the device. Therefore, it is considered that the development of a composition capable of continuously suppressing the growth of microorganisms in the material after sterilizing or bacteriostatizing the microorganism attached to the material is very useful.

The composition of the present invention has an excellent bactericidal or bacteriostatic action, and can be used for bactericidal or bacteriostatic of various substances. In this specification, sterilization refers to killing microorganisms (but not limited to complete killing), and bacteriostasis refers to inhibiting the growth of microorganisms. Therefore, in the subject to which the sterilizing or bacteriostatic composition of the present invention is applied, the growth of microorganisms is suppressed or the number of microorganisms is reduced.
The kind of microorganisms sterilized or bacteriostatic by the composition of the present invention is not particularly limited. Yeast, molds of the genus Cladosporium, Escherichia coli, Salmonella enterica, Staphylococcus aureus, Pseudomonas aeruginosa L. , Etc. In particular, acid-resistant bacteria such as lactic acid bacteria have conventionally been difficult to remove because they survive even in the low pH range where normal microorganisms are inhibited from growing, but these are also sterilized or bacteriostatic by the composition of the present invention. Can do. Thus, the composition of the present invention has high utility value because it is also useful for microbial species that have been difficult to remove in the past, such as acid-resistant bacteria.
The composition of the present invention can be used for sterilization or bacteriostatic of various materials. The application target of the composition of the present invention is not particularly limited as long as contact with the composition of the present invention is allowed. Preferable examples of the application target of the composition of the present invention include foods, equipment for handling foods, and environments where foods are present. Equipment that handles the food includes equipment that may come into contact with food in the process of production, processing, distribution, storage, cooking, etc., for example, equipment on the production line of a food production or processing plant, storage or transportation of food Containers, cooking utensils, cooking tables, workers' gloves and apron, work clothes, etc. The environment in which food exists is the environment in which food is handled, for example, the environment in which food is manufactured, processed, distributed, stored, cooked, etc., and more specifically, the food manufacturing or processing factory, food storage, cooking place, etc. Walls, floors, ceilings, pillars, doors, windows, ventilation holes.
The sterilization or bacteriostasis of an object by the sterilization or bacteriostatic composition of the present invention can be performed by bringing the composition of the present invention into contact with the object. Since the composition for bactericidal or bacteriostatic of the present invention is liquid, it can be easily applied to a subject to be bactericidal or bacteriostatic. For example, the liquid composition of the present invention may be mixed in a substance to be sterilized or bacteriostatic (for example, food). Further, for example, the liquid composition of the present invention may be sprayed or applied to a substance to be sterilized or bacteriostatic, or the target substance may be immersed in the liquid composition of the present invention. Preferably, the liquid composition of the present invention is sprayed or applied to a subject to be sterilized or bacteriostatic. Objects that come into contact with the liquid composition of the present invention are sterilized or bacteriostatic.
In a preferred embodiment of the present invention, the composition of the present invention is brought into contact with the subject by spraying, applying, or immersing the composition of the present invention on the subject to be sterilized or bacteriostatic. Furthermore, the object brought into contact with the composition of the present invention may be dried. By the drying, volatile components contained in the composition of the present invention, such as an aqueous solvent and ethanol, are volatilized and removed from the target. Even after the removal of the volatile components, the bactericidal or bacteriostatic action continues in the subject to which the composition of the present invention is applied. Therefore, in this embodiment, the composition of the present invention not only exhibits sterilization or bacteriostatic activity against a subject in a liquid state, but also suppresses the growth of microorganisms in the subject even in a dry matter state.
Therefore, another embodiment of the composition of the present invention may be a liquid composition for imparting antibacterial properties to a subject. The antibacterial property is imparted to the subject by adhering the composition of the present invention to the subject to be imparted with the antibacterial property by spraying, coating, dipping, or the like. If necessary or preferably, the object to which the composition of the present invention is further adhered is dried. In the present specification, “antibacterial” of a subject refers to the property of the subject that microorganisms attached to or invaded the surface of the subject can be sterilized or bacteriostatic. This aspect is very useful for an environment where it is desired to constantly prevent microbial growth, or for materials and equipment used therein, for example, an environment where food is handled or food handling equipment used there.
The composition of the present invention is used at a dose of about 0.1 to 5.0 mL per 100 cm 2 area of the subject, whether used for sterilization or bacteriostasis of the subject, or for imparting antibacterial properties to the subject. Preferably, it is used at a dose of about 0.5 to 1.0 mL per 100 cm 2 area of the subject. Preferably, this dose of the composition is evenly applied to the subject, preferably by spraying or application.
