Abstract
La présente invention concerne un système de refroidissement de cuisine, comprenant une cuisinière (10) et un appareil d'évacuation de fumée (20), et comprenant également une entrée d'air froid (30), l'entrée d'air froid (30) étant raccordée à un module de réfrigération de climatisation intérieur (40) dans une autre cuisine au moyen d'un conduit de transport de froid (31), le module de réfrigération de climatisation intérieur (40) étant pourvu d'un ventilateur de transport de froid (41) transportant l'air froid à l'entrée d'air froid (30). Le système selon l'invention empêche l'inconfort du cuisinier dû à la température élevée dans une cuisine; l'air froid introduit par l'entrée d'air froid (30) reconstitue la pression négative dans la cuisine provoquée par le fonctionnement de l'appareil d'évacuation de fumées de cuisine (20), de telle sorte que la pression dans la cuisine est normale, et l'air extérieur vicié entrant dans la cuisine à travers un espace dans la fenêtre est empêché. La présente invention concerne également un procédé de refroidissement de cuisine.
