Abstract

El método comprende cortar patatas formando láminas de entre 1 y 2 mm de grosor, apilar en capas alternas superpuestas dichas láminas dentro de un molde (20) con paredes laterales (22, 23) de entre 2 y 3 cm de altura interior, tratar térmicamente el milhojas y posteriormente producir su enfriamiento y envasado. El procedimiento también incluye una etapa de conservación que incluye envasar al vacío el molde (2G) con el milhojas de patata en un envase de lámina de plástico (25) antes del tratamiento térmico, y someter dicho milhojas envasado al vacío al citado tratamiento térmico que produce su pasteurización.
