- FANs are those compounds that affect the nutritional value of some foods, especially seeds, because they hinder or inhibit the assimilation of nutrients that come from foods generally of plant origin, including proteins and minerals. From the biochemical point of view, these factors are of a varied nature and can become toxic or cause undesirable physiological effects such as flatulence; stomach bloating, pancreatic effects, agglutination of red blood cells, decreased nutrient assimilation, among others.
- canavanine is caused by the replacement of this in proteins, which may be the cause of its toxic effect.
- Concanavalin A and B is soluble in water so it can be removed by soaking the seeds of Canavalia Canavalia ensiformis.
