Abstract

La présente invention concerne une confiserie aérée de longue conservation réfrigéré ou à la température ambiante dont la microstructure est stable aux effets de la température lors du stockage du produit de longue conservation réfigéré ou à la température ambiante .L'invention concerne également un effet synergique de stabilisation concernant la combinaison de l'hydrophobine, d'une protéine secondaire et d'un co-tensioactif qui permet d'obtenir la stabilisation observée.
