Abstract
Turkish coffee is prepared in a pot. Steam handle, rod of steam generator (of Espresso machine or any steam generator) is dipped in the mixture in the pot. By means of steam valve, sufficient steam is sprayed to the mixture and coffee is made. By this means, coffee having sufficient consistency (the same viscosity in every sip) and highly foamy coffee is made ready to serve serially.

Method of making Turkish coffee
The invention is related to the method of making Turkish coffee and similar coffees by use of any steam generator (Espresso machine or apparatus with steam generator steam rod).
Coffee tree from rubiaceae family is a plant with white flower and red fruit. Coat of fruit is bitter but its pulp is sweet. Beans called coffee are inside of this fruit and high quality coffee is produced in 17 different countries in the world.
Coffee is the most drunken drink following the water in the world and approximately sixty different cultures are seen. While raw coffee comprises of more than 200 chemical compounds, this figure increases to 1200 when it is processed. All of them contribute to create taste and flavor.
Coffee consumption per person is approximately 6-7 kilograms in a year in Europe and this rate is 11-12 kg in Scandinavian countries. It is very clear that coffee preferred and consumed by such a large masses in the world has very high economic value and for this reason it is a sector open to competition.
One of the most significant different coffees known and preferred in the world is Turkish coffee. Turkish coffee made of powder by grinding beans of coffea plant and having a special taste, smell and making method has its unique serving tradition and it is the only coffee type served with grounds.
In the present method, Turkish coffee is made by adding processed coffee in a pot with a little of water and sugar as desired and making by boiling at medium heat and coffee boiling for a given period and foaming is served in a cup. The significant point here is that the foam rate should be high as much as possible. One of the most

significant problems in the classical method is to adjust the coffee quantity to be cooked in the oven simultaneously when it is necessary to serve coffee to a crowded group.
The purpose of the invention is that in addition to achieving soft drinking and high foam since it is made with hot steam, it is possible to serve coffee to many customers simultaneously. It is possible to make coffee for 40-person within 10 minutes. This figure increases and decreases by the number of the person.
Coffee and method of making developed to achieve these purposes is as follows:

Claims
1- The invention is the method of making Turkish coffee and its feature is that steam handle of steam generator (of Espresso machine or any steam generator) is dipped in Turkish coffee prepared in a pot and hot steam in desired quantity is sprayed to the pot by means of steam valve and making is completed by steam.
2- The invention is the coffee making method specified in claim 1 and the same method can be applied to all coffees grounds of which can be drunk.
