  • the push off plate 20 may be displaced to its extended position, in abutment with the feet 18 at the ends of the support legs 16, and placed in contact with the flanges 34 provided at the upper ends of the side walls of the receptacle 10, within the boundary defined by the upwardly extending lips 36 thereof.
  • the support legs 16 fit outside of the receptacle 10 and further facilitate correct orientation of the spikes 12 and their support plate 14 over the receptacle 10.
  • the support plate 14 of the second part 8 of the device is displaced downwardly until the support plate 14 abuts the push off plate 20 and the spikes 12 are fully inserted into the receptacle.
  • the length of the spikes 12 (measured from the base of the push off plate 20 when in its retracted position) may be selected to be substantially equal to the depth of the receptacle 10.
  • the base of the receptacle 10 may be formed from a relatively soft material, such as plastic or wood, to avoid damaging the pointed ends of the spikes 12 should they engage of base of the receptacle.
  • the first part may be displaced manually or may be displaced by a suitable press machine (not shown).
  • the support plate 14 of the second part 8 of the device may be subsequently displaced upwardly with respect to the first part 6 to lift the spikes 12 out of the receptacle 10, the meat being retained on the spikes. This may be achieved manually or by using suitable mechanical lifting means.
  • the second part 8 of the device is then placed onto a surface, such as a chopping board 38, resting upon the feet 18 of the support legs 16, and the meat can then be cut into cubes, strips or slices by inserting a cutting blade between selected rows of the spikes 12.

  • This may be done manually, using a knife 32 (as shown in Figure 5) or may be mechanised, using a suitable cutting device.
  • the size of each cube or slice of meat may be determined by the spacing of each cut (i.e. the number of spikes 12 between each cutting action).
  • the spikes 12 are arranged on the support plate 14 in parallel rows, the spikes in each row being offset with respect to the spikes in an adjacent row such that each cube, strip or slice of meat is held in place by at least two spikes extending therethrough during cutting to prevent the portion of meat from rotating during cutting, which would otherwise lead to an uneven cut. After the meat has been cut into portions of the desired number and size, each portion remains held by at least one spike until removed therefrom by the push off plate 20.
  • the meat can be removed from the spikes 12 by displacing the push off plate 20 downwardly with respect to the support plate 14, moving the push off plate downwardly along the spikes and thereby pushing the meat off the spikes, until the push off plate 20 abuts the feet 18 at the lower ends of the support legs 16 when in its extended position, as shown in Figure 6.
  • This may be achieved manually by pushing down on the handles 24,26 provided on either side of the push off plate 20.
  • Figure 8 shows a support frame 40 that may be used to facilitate removal of the meat portions from the spikes 12.
  • the support frame 40 comprises a pair of parallel support rails 42,44 provided an at upper end of vertical struts 45, Each rail 42,44 comprising a side wall 46 having a lower track 48 extending inwardly from a lower end thereof for receiving a lower face of a respective side of the support plate 14 of the second part 8 of the device and an upper lip 50 extending inwardly from an upper end of the side wall 46, said lip 50 being adapted to engage an upper face of the support plate 14 such that the sides 52,54 ( Figure 7) of the support plate 14 can be slid into the support rails 42,44 from one end thereof.
  • the support frame 40 may be located over a suitable collection bin.
  • a device for dividing meat into portions in accordance with a second embodiment of the present invention is illustrated in Figures 10 to 14.
  • the device in accordance with the second embodiment is very similar to that of the first embodiment, with a number of relatively minor changes.
  • the device of the first embodiment may be modified to incorporate such changes, individually or together.
  • a first difference between the devices of the first and second embodiments is that, in the second embodiment, the guide posts 28 are omitted and the handles 24,26 are extended upwardly such that the handles 24,26, extending from the push off plate 20 and engaged within slots formed in the sides of the support plate 24, guide movement of the push off plate 20 and retain the push off plate 20 in parallel relationship with the support plate 14, in combination with the support legs 16 depending from the support plate 14.
  • a rod 25 extends between the handles 24,26 to delimit downward travel of the push off plate 20 with respect to the support plate 14.
  • the rod 25 may comprise a threaded fastener, allowing the sliding movement of the handles 24,26 within their receiving slots in the support plate 24 to be adjusted by tightening or loosening such threaded fastener.
  • a second modification is that an array of guide slots 100 may be formed in the underside of the push off plate to guide the insertion of knives 32 between the spikes 12 during cutting of meat engaged upon the spikes.
  • the slots 30 in the receptacle 10 may be omitted. It has been found that, in many applications, it is more convenient to slice the meat or layer the meat within the receptacle 10, obviating the need to horizontally cut the meat once it has been placed into the receptacle 10.
  • the second part 8 of the device is then placed over the first part 6 so that the push off plate 20 rests on the flanges 34 at the upper edges of the receptacle 10, within the boundary defined by the upwardly extending lips 36 thereof, as shown in Figure 1 1 .
  • the support plate 14 of the second part 8 of the device is then displaced downwardly until the support plate 14 abuts the push off plate 20 and the spikes 12 are fully inserted into the receptacle such that the spikes 12 pass through the portions of meat within the receptacle, as shown in Figure 12.
  • the second part 8 of the device is then lifted out of the first part 6, the meat being retained on the spikes 12. This may be achieved by lifting the second part 8 of the device using the handles 24,26.
  • the second part 8 of the device is then placed onto a surface, such as a chopping board 38, resting upon the feet 18 of the support legs 16, and the meat can then be cut into cubes, strips or slices by inserting a cutting blade between selected rows of the spikes 12.
  • a cutting blade between selected rows of the spikes 12.
  • the size of each cube or slice of meat may be determined by the spacing of each cut (i.e. the number of spikes 12 between each cutting action).
  • the guide slots 100 facilitate insertion of the cutting blade between the spikes 12, ensuring that consistent sized cubes or slices of meat are cut. After the meat has been cut into portions of the desired number and size, each portion remains held by at least one spike until removed therefrom by the push off plate 20.
  • the second part 8 of the device is placed onto a support frame 40, preferably located over a suitable collection bin or other receptacle, and the meat can be removed from the spikes 12 by displacing the push off plate 20 downwardly with respect to the support plate 14, moving the push off plate downwardly along the spikes and thereby pushing the meat off the spikes, until the push off plate 20 abuts the feet 18 at the lower ends of the support legs 16 when in its extended position.

  • the number of spikes 12 is reduced, increasing the spacing between the spikes 12 and facilitating insertion of the spikes into such tougher meat.
  • short guide posts 1 10 may be provided, depending from the support plate 14 in between rows of spikes 12.
  • the purpose of the posts 1 10 is not to retain meat thereon, but merely to guide insertion of a cutting blade between the spikes 12 and guide posts 1 10.
  • slots may be formed in a lower face of the push off plate 20 for guiding movement of the support blade between the spikes 12 and posts 1 10.
  • a device in accordance with the present invention may be used for dividing any meat, such as beef, poultry or fish, into portions. Such device may also be suitable for dividing/cutting other food items into portions, such as fruit or vegetables.

Abstract

La présente invention concerne un dispositif pour la découpe de viande en portions comportant un réceptacle en forme de boîte pour recevoir des morceaux de viande, et un élément de support comprenant un réseau de pointes parallèles se prolongeant depuis celui-ci disposées en une pluralité de rangées parallèles, les pointes étant agencées pour être insérées dans le réceptacle pour passer à travers les morceaux de viande s'y trouvant de sorte que la viande soit retenue sur les pointes lorsque les pointes ont été retirées du réceptacle, un ou des dispositif(s) de coupe pouvant être ultérieurement passé(s) à travers des rangées sélectionnées desdites pointes pour découper la viande retenue sur celles-ci en une pluralité de portions.
