Abstract

The present invention relates to a mobile installation for red meat slaughtering, which is composed of three equipped compartments (100,200,300), the first one of which (100) being used for slaughtering, the second one (200) being used for sorting and unloading the sides and quarters of the slaughtered animals, and the third one (300) being used for low temperature storage of animal sides and quarters not unloaded in correspondence of said second compartment.

Description
A mobile installation for red meat slaughtering
The present patent application for utility model relates to a mobile installation for red meat slaughtering.
The peculiarities and advantages of the invention will be more evident after a short description of the prior art.
First of all, it must be noted that the expression "red meat slaughtering" refers to slaughtering of animals, such as cattle, pigs, sheep, horses and camels.
Slaughtering of similar animals is only carried out so far in fixed installations, viz. traditional slaughterhouses.
Therefore, stockbreeders are forced to organize regular transports to transfer the animals from the breeding farm to the slaughtering house.
Considering that "read meat" animals normally have a large size and heavy weight, the difficulties and costs of such a transport activity are evident.
In view of the above, the idea of the present invention has been to revolutionize such a consolidated logical principle.
Rather than moving live animals, it has been considered more convenient to devise a mobile slaughtering installation, adapted to be easily moved from one breeding farm to another, according to the specific needs, in order to slaughter animals locally.
This makes it possible to eliminate the transfer operations of the animals, which, in addition to being complicated and expensive, may compromise the health conditions and physical safety of the animals.
In order to optimize the idea of the invention, the mobile slaughtering installation of the invention has a total volume that corresponds to an ordinary container used for goods transportation. Such a solution allows for loading the complete installation on the platform of a trailer truck, without difficulties, being sure that transfers will be made in the best practicality and safety conditions possible.
Moreover, it must be noted that the installation of the invention is provided with a convertible structure to adjust its height to the different operating requirements according to the size of the animals to be slaughtered.
In fact, the slaughtering chamber is provided with a rectangular liftable ceiling associated on each of its four sides with an extendible piece of cloth rolled around a roll with horizontal axis.
Upon lifting the ceiling, the four pieces of cloth tend to extend vertically, being progressively unrolled from the rolls and perfectly covering, on each side of the slaughtering chamber, the space created between the ceiling and the top of the vertical walls of the slaughtering chamber.
Upon lowering the ceiling again, the four pieces of cloth tend to
"shorten" spontaneously, being rolled again on the rolls with horizontal axis suitably subject to the action of a return spring.
Moreover, the installation of the invention is provided, in combination with a slaughtering chamber, with two additional compartments, of which at least one is used as cold store.
In view of the above, at least for a limited number of slaughtered animals, said installation guarantees the conservation and correct transfer of animals from the slaughtering site to the final delivery location.
In order to optimize operation, the installation is internally provided, in correspondence of the ceiling of the three compartments, with an overhead conveyor system that allows for hanging the freshly-slaughtered animals, carrying out the necessary processing works, and transferring the animals from an operating station to another operation station and conveying them towards the unloading station of the installation.
Moreover, it must be considered that the usefulness of the new installation is additionally increased because it is completely autonomous, being provided with all the necessary functional components, also with reference to the various operations that must be carried out according to the type of animals to be slaughtered.
Additionally, the installation of the invention has been devised in order to operate according to highly hygienic conditions, being substantially immune from any external contamination, given the fact that the internal compartments are suitably insulated by the surrounding atmosphere.

Referring to the figures, the installation of the invention (Im) consists in a parallelepiped metal cabin, with rectangular base, preferably provided with the size of an ordinary container for goods transportation.
Such a structure of formed of a sturdy platform (1 ), acting as floor, laterally bordered by two opposite longitudinal walls (2a, 2b), between which two transversal end walls (3a, 3b) are mounted, as well as two intermediate partition walls (4, 5).
The installation (Im) comprises a first compartment (1 00) with variable height, a second compartment (200) and a third compartment (300) with fixed height; it being also provided that the first (100) of these compartments develops for at least half of the length of the entire installation (Im).
The first compartment (100) is comprised between the first (3a) of said transversal end walls of the installation (Im) and the first (4) of said two partition walls.
The second compartment (200) is comprised between the first partition wall (4) and the second partition wall (5), whereas the third compartment (300) is comprised between the second partition wall (5) and the second (3b) of the transversal end walls of the installation (Im).
The first compartment (100) consists in the actual slaughtering chamber of the installation (Im); the second compartment (200) is the operating station where the slaughtered animals are unloaded outside the installation (Im); the third compartment (300) acts as cold store for the temporary conservation of slaughtered animals.
Moreover, the second compartment (200) and the third compartment
(300) are covered by fixed ceilings (201 , 301 ), whereas the first compartment (100) is provided with a movable ceiling (101 ) adapted to be lifted and lowered in parallel direction.
Whereas the installation (Im) is in non-operating condition (for example, during transportation from one place to another), the movable ceiling (101 ) of the first compartment (1 00) is maintained at the same height as the fixed ceilings (201 , 301 ) of the second compartment (200) and the third compartment (300), as illustrated in Fig. 6.
When the installation (Im) must be operated, the ceiling (101 ) of the first compartment (100) is lifted upwards, in order to increase the internal volume of the compartment (1 00) and, most of all, adjust the height of the slaughtering chamber to the length of the specific animal to be slaughtered, as illustrated in Fig. 1 .
As it is known, some of the operations to be carried out during slaughtering require to hang the animal vertically from the ceiling (1 01 ).
In detail, the movable ceiling (101 ) consists in a rectangular frame made of H-shaped metal sections and covered on top with a sheet metal plate.
In particular, the frame is formed of four perimeter sections, of which two longitudinal (1 02) and two transversal (103) sections, as well as an additional longitudinal section (1 04) disposed in central position on the ceiling (101 ), and two "intermediate" transversal sections (1 05, 1 06), the first one
(105) of which is preferably disposed in central position and the second one
(106) is disposed towards said first partition wall (4).
The central longitudinal section (104) of the movable ceiling (101 ) acts as support and guide track for a sliding hoist (PS), whereas the two intermediate transversal sections (1 05, 106) support, by means of suitable V- shaped vertical arms (107a), a two-track guideway (107) with a shearing device.
In particular, the two-track guideway (107) is disposed along the longitudinal axis of symmetry of the movable ceiling (101 ) under said intermediate transversal section (104).
In order to obtain said vertical travels of the movable ceiling (1 01 ) of said first compartment (100), the movable ceiling (101 ) is supported by four telescopically extendible columns (Co), each of them being disposed in correspondence of one of the vertical corners of the first compartment (1 00).
Each of said columns (Co) is formed of a fixed bearing section associated with a movable section adapted to make vertical alternate travels. Referring to Figs. 8 to 12A, the fixed section of each column (Co), with height substantially equal to the vertical walls of the first compartment (100), consists in the liner (1 08) of a hydraulic cylinder provided at the base of a horizontal plate (108a) for fixing to the platform (1 ) of the installation (Im).
Said liner (108) is housed on the bottom of the internal concave side of a first metal section (1 09) disposed in vertical position and provided with L- shaped section, being formed of two identical wing disposed at 90 °.
Said liner (108) must be fixed to the platform (1 ) of the installation (Im) in such a position that the first metal section (1 09) is engaged and centered exactly in one of said vertical corners of the first compartment (100).
Moreover, said first metal section (1 09) is maintained at a short distance from the back walls (2a or 2b / 3a or 3b) defining the corresponding vertical corner of the first compartment (100), in such manner to generate a vertical space (Iv) with L-shaped profile between them.
As illustrated in Figs. 8 and 8A, said first metal section (109) of each telescopic column (Co) is fixed to the vertical back walls of the first compartment (1 00) by means of two metal brackets (1 1 0).
Within such a telescopic column (Co), the vertically-sliding section is represented by the extractable stem (1 1 1 ) of the hydraulic cylinder, the free end of which is fixed under one of the corners of said frame of the movable ceiling (101 ) of the first compartment (1 00).
Under each corner of the frame, in slightly more external position than the extractable stem (1 1 1 ), a second metal section (1 12) with vertical direction is provided, being likewise provided with L-shaped section formed of two wings disposed at 90°.
In order to favor the coupling and centering of the top section of each of said second vertical metal sections (1 12), the same is provided on both sides with a reinforcement piece (1 12a) welded to the frame of the movable ceiling (101 ).
So, the second metal section (1 1 2) can make vertical alternate travels together with said movable ceiling (101 ) of the first compartment (100). Moreover, it must be noted that the position and thickness of the second metal section (1 12) are such that, during said vertical alternate travels, it can be exactly inserted, taking advantage of its containment and guide action, inside said vertical space (Iv) provided on the back of said first metal section (1 09) of the column (Co), as illustrated in Fig. 9.
An additional important solution related with the use of said movable ceiling (101 ) refers to the fact that, in spite of lifting the ceiling (1 01 ), the first compartment (100) can be perfectly insulated from outside, without generating any empty space or opening on its vertical walls.
Such a purpose has been achieved by providing that the four H- shaped perimeter metal sections (102, 103) of the bearing frame of the ceiling (101 ) support horizontal rolls (1 1 3), in external position for their entire length, in order to roll pieces of waterproof cloth (1 14).
In particular, as illustrated in Fig. 9A, each of said rolls (1 1 3) is inserted into the longitudinal groove generated on the external side of the bearing metal section and supported by pairs of perforated ears (1 13a) with vertical axis, wherein the end pins (1 13b) of the rolls (1 13) are inserted.
In view of the above, the lower horizontal border of each piece of cloth (1 14) is fixed against the internal side of the vertical wall of said first compartment (100), at a height slightly lower than the top, as illustrated in Fig. 8.
Because of the presence of such a fixed point, the lifting of the movable ceiling (101 ) generates the progressive unrolling of said four pieces of cloth (1 14) from the horizontal rolls (1 1 3).
The length of the pieces of cloth (1 14) is such to guarantee that, regardless of the height given to the ceiling (1 01 ), they are always able to close the first compartment (100) on the four sides, in the space comprised between the ceiling (101 ) and the top of the four vertical walls.
Each roll (1 13) is associated with elastic return means. Therefore, during the following descending travel of the movable ceiling (101 ), the pieces of cloth (1 14) are spontaneously rolled again on the rolls (1 1 3). As illustrated in Figs. 9 and 10, said pieces of waterproof cloth (1 14) are reinforced by means of a series of horizontal metal rods (1 14a) incorporated in their structure.
Moreover, each one of said L-shaped second metal sections (1 12) is externally provided, starting from its vertical corner, with a pair of vertical sheet metal sections (1 15) disposed at 90 ° and facing towards opposite sides.
So, each of said vertical sections (1 1 5) is disposed on the back of one of said wings of the second metal section (1 12) to define, in cooperation with it, a vertical groove (Sv) adapted to receive one of the vertical edges of one of said pieces of cloth (1 14).
Such a solution guarantees that, during the ascending and descending travels of said movable ceiling (1 01 ), the two vertical edges of each pieces of cloth (1 14) can slide inside two vertical grooves, being suitably contained and guided.
In order to avoid tearing or jamming said pieces of cloth (1 14), each of said vertical sections (1 1 5) is provided with a rubber seal (1 1 5a) for the entire height of its free edge.
Moreover, it must be considered that, acting as slaughtering chamber, said the internal space of said first compartment (1 00) is suitably organized for the specific activities to be carried out.
First of all, it must be noted that said first longitudinal wall (2a) of the installation (Im) is provided with an opening (1 1 8) disposed in the proximity of said first transversal wall (3a), acting as insertion section for the animal to be slaughtered inside said first compartment (1 00).
Said opening (1 18) provides access to a cage (1 16) - technically defined as "trap" - supported by a raised base (1 1 7) that covers the entire width of the first compartment (100).
The dimensions of said cage (1 16) are such that the animal contained inside said cage (1 16) is practically immobilized. At the opposite end of the cage (1 16), in correspondence of the second longitudinal wall (2b) of the installation (Im) a window (1 1 9) is provided, giving access to the top of the cage (1 1 6).
The operator in charge of slaughtering the animal can use this window (1 1 9) while remaining outside the installation (Im) to kill the animal contained in the cage (1 16) with one of the weapons that are normally used in slaughtering houses.
Once it is completely contained in the cage (1 1 6), the animal places its head at the height of said window (1 19) in a suitable position to be killed with a traditional electronarcosis stunning device.
After killing the animal, the operators in charge of the various slaughtering operations enter into action.
In order to carry out such operations, the operators enter in the first compartment (1 00) through an entrance door (1 20) in lateral position on said first longitudinal wall (3a) of the installation (Im) at a short distance from said opening (1 18) that provides access to the animal.
The first operation carried out on the animal is bleeding and in order to carry it out, the body of the animal must be extracted from the cage (1 16).
In fact, the front vertical wall (1 1 6a) of the cage (1 16) can slide upwards, like a shutter, freeing a large longitudinal section to extract the animal's body.
Moreover, the base (1 17) provided on the bottom of the cage (1 16) is joined by means of a slide (1 21 ) with a cradle (122) with length identical to the width of the first compartment (100).
Therefore, after lifting the mobile wall of the cage (1 1 6), the animal's body can be dragged onto said slide (121 ) in order to reach the cradle (1 22) where bleeding is carried out.
The bottom of said cradle (122) is provided with discharge holes (not illustrated in the figures) ending under the platform (1 ) of the installation for evacuating the animal's blood and washing water.
After completing the bleeding operation, the animal is lifted with the sliding hoist (PS) mounted in correspondence of the intermediate longitudinal section (104) provided on the movable ceiling (1 01 ) of the first compartment (100).
More precisely, the animal is hung to said sliding hoist (PS) from a lower limb and transferred, on board of said hoist (PS), towards the two-track guideway (107) equipped with shearing device.
Now, the operator removes the animal from the sliding hoist (PS) and, after placing a pulley with hook on each of the lower limbs, hangs it onto the two-track guideway (107).
In such a vertical position, the animal is skinned and cut in pieces with said shearing device provided on the two-track guideway (1 07). At the end of the operation the animal is divided into two sides.
Moreover, it must be considered that inside said first compartment (100) of the installation (Im), the two-track guideway (1 07) is situated in the proximity of said first partition wall (4), above a substantially square platform (123) provided with a central hole (123a).
In particular, it is a liftable platform (1 23) adapted to slide vertically with respect to four uprights (1 24) situated at the four corners because of the action of two hydraulic cylinders (not illustrated in the figures).
The operators in charge of skinning and cutting the animal in pieces work on said liftable platform (1 23), adjusting the height of the platform as desired in order to comfortably reach the different areas of the animal that hangs vertically from said movable ceiling (101 ).
The presence of said central hole in the liftable platform (123) is justified by the fact that said platform (123) must not interfere with the animal that hangs vertically from said two-track guideway (1 07). In such a situation, in fact, the animal's head can be inserted into said central hole.
In correspondence of said platform (1 23), inside the first compartment (100), a cabinet (125) is provided with connections for electricity, hot water, cold water and sterilizing liquid to be used during skinning.
In any case, as soon as the operations carried out in this operating station are completed, the sides of the animal are unhooked from the two- track guideway (107) and hooked to a fixed hoist (PF) installed in correspondence of said intermediate longitudinal section (104) of the movable ceiling (1 01 ) of the first compartment (100) in intermediate position between said two-track guideway (1 07) and said first partition wall (4).
By means of said fixed hoist (PF) each side of the animal can be lowered towards the floor of the first compartment (100) to be cut in quarters by the operators.
Now, each quarter of the slaughtered animal is hooked to a pulley with hook to convey it towards the two additional compartments (200, 300) of the installation (Im).
It must be noted that said second compartment (200) and third compartment (300) are provided on the ceiling with a guide track (B) used to apply the pulleys with hook provided in the quarters of the animals coming from said first compartment (100).
So, the quarters of the animals can slide, together with the pulleys, along said guide track (B), being manually pushed by the operators.
In order for the pulleys supporting the quarters of the animals to hook to said guide track (B) and make their forward travel inside the installation (Im), the two partition walls (4, 5) have a portal-shaped structure, and not a continuous surface.
In fact, starting from the lower horizontal border, each of said two partition walls (4, 5) has a large central opening (40, 50) shaped as a door, although not for its entire height.
The upper horizontal border of each opening (40, 50) is joined on top with a narrow central notch (41 , 51 ) extending vertically almost to the height of the ceilings (201 , 301 ) of said second compartment (200) and third compartment (300).
The function of said two narrow notches (41 , 51 ) provided at the top of the partition walls (4, 5) is to contain said guide track (B) mounted at the top of said second compartment (200) and third compartment (300), whereas the function of the large openings (40, 50) is to permit the transfer, from one compartment to the other (200, 300), of the quarters of animals hanging from the pulleys. With reference to the configuration of said guide track (B), it must be noted that it comprises a first section (61 ) longitudinally crossing the second compartment (200) of the installation (Im), as well as a second section (62) in consecutive position to the first section (61 ), longitudinally crossing the third compartment (300).
At approximately half of its length, said first section (61 ) is provided, with the interposition of a traditional switch system, with a lateral branch line (61 a) extending up to an opening (202) obtained on said second longitudinal wall (2b) of the installation (Im), basically for its entire height, and adapted to act as unloading station for the slaughtered animals.
Likewise the openings (40, 50) of the two partition walls (4, 5), also the opening (202) obtained on said second longitudinal wall (2b) of the installation (Im) is centrally provided, starting from its upper horizontal border, with a narrow notch (202a) adapted to house said lateral branch line (61 a) of the guide track (B).
Evidently, said notch (202a) has been devised to permit the pulleys supporting the quarters of the animals to reach, without obstacles, the stop position provided at the end of said lateral branch line (61 a) of the guide track (B), practically flush with said opening (202).
The second section (62) of the guide track (B), which is contained in the third compartment (300), is placed side by side with a similar third longitudinal section (63), with the interposition of a suitable lateral branch line (62a) and switch system.
The decision to provide said two side-by-side longitudinal sections (62, 63) of the guide track (B) is justified by the need to hang a larger number of slaughtered animals inside the third compartment (300), which acts as refrigerator.
With reference to the refrigerating function of the third compartment (300), it must be noted that the third compartment (300) is associated with a traditional refrigerating unit (302) and provided with a thermally insulating door (303) mounted in correspondence of said opening (50) obtained on the second partition wall (5). Referring to Figs. 2 and 3, it is finally noted that the installation (Im) can also be equipped with a traditional scalding/de-hairing unit (70) for pig slaughtering.
Such unit (70) is contained in a case (71 ) that, in non-operating mode of the installation (Im), remains inside the first compartment (100) in intermediate position between the cage (1 16) and the mobile platform (1 23) without creating any obstacle outside the installation.
When slaughtering pigs, the internal space of the first compartment (100) is freed and said case (71 ) slides outside the installation (Im) through a suitable opening obtained on said second longitudinal wall (2b), as illustrated in Fig. 2.
Therefore, being contained in said case (71 ), said scalding/de-hairing unit (70) projects with respect to the first compartment (100) of the installation (Im), together with the case (71 ), as illustrated in Fig. 2.
However, considering that said unit (70) cannot be comfortably used in such a position by the operators, the scalding/de-hairing unit (70) is adapted to make an "inverse" travel with respect to the case (71 ) in order to be extracted from the case (71 ) and dragged inside the first compartment (1 00) in operating condition.
Additionally, the installation of the invention (Im) consists in a platform
(not illustrated in the figures) adapted to be fixed inside the first compartment (100) basically above said door (1 20).
The operator can climb the platform in order to comfortably carry out the first skinning operations on the bloodless animal that is still hanging from the sliding hoist (PS).
Finally, it must be noted that the installation of the invention can be realized, while still falling into the same inventive idea, according to a less sophisticated constructive embodiment, although totally equivalent in functional terms (not illustrated in the figures).
In particular, the second embodiment of the invention provides for a different operating mode in order to bring said movable ceiling (101 ) of the first compartment (100) of the installation (Im) in operating lifted condition. More precisely, the movable ceiling (1 01 ) can be deprived of said extendible columns (Co) and pieces of cloth (1 14), in favor of functionally equivalent means characterized by a longer installation time.
Said extendible columns (Co) are replaced with traditional "non- extendible" columns, suitably provided with height higher than the longitudinal (2a, 2b) and transversal (3a, 3b) walls of the installation (Im).
Said pieces of cloth (1 14) are replaced with traditional sheet metal panels.
Now, it is necessary to illustrate the position of the movable ceiling (101 ) and of its optional fittings when the ceiling (101 ) must be maintained in non-operating lowered position or must be brought to its operating lifted position.
Whereas the ceiling (1 01 ) is maintained in non-operating position - for example, during transportation - the ceiling (101 ) is situated at the top of said longitudinal (2a, 2b) and transversal (3a, 4) walls of the first compartment
(100) and said non-extendible columns and sheet metal panels are loaded inside said first compartment (100).
Instead, in order to bring the ceiling (101 ) to the operating lifted position, said non-extendible columns must be mounted at the four corners of the first compartment (1 00) and fixed on top with the bearing frame of the ceiling (101 ).
Then, the sheet metal panels are fixed on the four sides of the ceiling
(101 ) , in such a position that they can perfectly close, on the four sides of the first compartment (100), the vertical space formed between the top of said longitudinal (2a, 2b) and transversal (3a, 4) walls and the ceiling (101 ) in lifted condition.

Claims
1 ) An installation for red meat slaughtering characterized in that it substantially consists in a parallelepiped cabin formed of a rectangular platform (1 ) from which two opposite longitudinal walls (2a, 2b) and two opposite transversal walls (3a, 3b) protrude, as well as a first partition wall (4) fixed between said two longitudinal walls (2a, 2b) in parallel direction to said two transversal walls (3a, 3b), in such manner to form a first compartment (100) between said first transversal wall (3a) and said first partition wall (4), and a second compartment (200) between the first partition wall (4) and said second transversal wall (3b) and also provided with entrance door (1 20) ; it being provided that said second compartment (200) has a fixed ceiling (201 ) and said first compartment (100) has a movable ceiling (1 01 ) associated with means adapted to change its height from a lower stop position, wherein it is at the same height as the ceiling (201 ) of the second compartment (200), to an upper stop position, wherein it is at a considerable higher height; it being provided that said movable ceiling (101 ) of the first compartment (1 00) is provided with means adapted to cover the space on the four sides formed between the top of said longitudinal (2a, 2b) and transversal (3a, 4) walls of the first compartment (100) and the movable ceiling (101 ) when the latter is brought to said upper stop position; it being also provided that said first compartment (100) is provided with means
(107,1 1 6, 1 17, 1 18, 1 19, 1 20, 1 21 ,1 22,123,125) adapted to carry out various slaughtering operations on animals, as well as with additional means (1 04, PS, PF) installed on the ceiling (101 ) to support and move the animals to be slaughtered; finally, it being provided that said second compartment (200) is likewise provided on the ceiling (201 ) with means (61 , 61 a) adapted to support and move the animals cut in pieces from the first compartment (1 00) , take them to a section (202) and unload them outside.
2) The installation of claim 1 , characterized in that said means adapted to bring said movable ceiling (101 ) of the first compartment (1 00) to its upper stop position consist in columns (Co) that can be extended beyond the height of said longitudinal (2a, 2b) and transversal (3a, 3b) walls of the installation (Im).
3) The installation of claim 1 , characterized in that said means adapted to bring said movable ceiling (101 ) of the first compartment (1 00) to its upper stop position consist in non-extendible columns (Co) provided with height higher than said longitudinal (2a, 2b) and transversal (3a, 3b) walls of the installation (Im).
4) The installation of one or more of the preceding claims, characterized in that said movable ceiling (1 01 ) of the first compartment (1 00) is provided with a rectangular frame, perimetrally bordered with two longitudinal sections (102) and two transversal sections (1 03), which is fixed at the four corners with the upper ends of said columns.
5) The installation of one or more of the preceding claims, characterized in that said means used to support and move the animals provided in the first compartment (1 00) consist in an additional longitudinal section (104), incorporated in the frame of the movable ceiling (1 01 ) in intermediate position between said two longitudinal sections (102), as well as in a sliding hoist (PS), adapted to be supported and guided by the intermediate longitudinal section (104), and in a fixed hoist (PF) likewise supported by the intermediate longitudinal section (104) in the proximity of said first partition wall (4).
6) The installation of one or more of the preceding claims, characterized in that said frame of the movable ceiling (101 ) of the first compartment (1 00) incorporates two additional transversal sections (1 05, 106), of which the first one (1 05) is situated in intermediate position between the two transversal sections (103) and the second one is situated in more proximal position to said first partition wall (4).
7) The installation of claims 4 to 6, characterized in that all sections of the frame provided on the movable ceiling (101 ) of the first compartment (1 00) have a H-shaped section.
8) The installation of one or more of the preceding claims, characterized in that said means adapted to cover the space on the four sides formed between the top of said longitudinal (2a, 2b) and transversal (3a, 4) walls of the first compartment (100) and said movable ceiling (1 01 ) in upper stop position consist in pieces of cloth (1 14) that can be rolled up.
9) The installation of one or more of claims 1 to 7, characterized in that said means adapted to cover the space on the four sides formed between the top of said longitudinal (2a, 2b) and transversal (3a, 4) walls of the first compartment (100) and said movable ceiling (1 01 ) in upper stop position consist in sheet metal panels.
10) The installation of one or more of claims 1 to 8, characterized in that said pieces of cloth (1 14), the lower ends of which are fixed towards the top of said longitudinal (2a, 2b) and transversal (3a, 4) walls of said first compartment (100), are rolled in upper position on rolls with horizontal axis (1 1 3), subject to the action of return means housed in longitudinal grooves provided in external position on said longitudinal sections (102) and said transversal sections (1 03), perimetrally bordering the frame of said movable ceiling (101 ); it being provided that each of said rolls (1 1 3) is supported at the two ends with vertical ears (1 13a) provided with holes to revolvingly receive the pins (1 13b) of the roll (1 13).
1 1 ) The installation of one or more of the preceding claims, characterized in that each of said extendible columns (Co) is formed of a fixed section, consisting in the liner (1 08) of a hydraulic cylinder with vertical direction and a sliding section, consisting in the extractable stem (1 1 1 ) of the cylinder; it being provided that said fixed section (1 08) is provided at the base with a horizontal plate (108a) for fixing above the platform (1 ), in slightly internal position with respect to one of the vertical corners of said first compartment (100).
12) The installation of claim 1 1 , characterized in that said liner (108) of said hydraulic cylinder is fitted, by means of suitable fixing means (1 10), on the bottom of the internal concave side of a first metal section (109) disposed in vertical direction and provided with substantially L-shaped section and in that said extractable stem (1 1 1 ) is housed at a short distance from the bottom of the concave side of a second metal section (1 1 2) likewise disposed in vertical direction and provided with substantially L-shape section ; it being provided that said second metal section (1 1 2) is welded on top under one of said corners of the frame of said movable ceiling (101 ) of the first compartment (100), in slightly more external position with respect to the fixing point of the upper end of said extractable stem (1 1 1 ); it being also provided that said second section (1 1 2) is adapted to exactly slide, during the alternate travels of said movable ceiling (101 ), inside a corresponding vertical space (Iv) with basically L-shaped profile, provided between the external side of said first metal section (109) and the internal side of the pair of walls (2a or 2b / 3a or 3b) that originate the vertical corner of the first compartment (1 00).
13) The installation of claim 1 2, characterized in that said means used to fix the liner (108) and the first metal section (109) are composed of two vertical metal brackets (1 1 1 ) applied in correspondence of the internal concave side of the first metal section (109).
14) The installation of claim 12, characterized in that said second metal section (1 12) is fixed on top to the frame of the movable ceiling (101 ) of the first compartment (100) with the cooperation of two stiffening lateral pieces (1 1 2a).
15) The installation of claim 1 2, characterized in that each of said L-shaped second metal sections (1 12) is externally provided, starting from its vertical corner, with a pair of box-shaped vertical sections (1 1 5) facing opposite sides and adapted to generate a vertical groove (Sv) on the back of each wing of the second metal section (1 12) to receive the vertical border of one of said pieces of cloth (1 14).
16) The installation of claim 15, characterized in that each of said vertical profiles (1 1 5) is provided with rubber seal (1 15a) for the entire height of its free end.
17) The installation of one or more of the preceding claims, characterized in that said said slaughtering means provided in the first compartment (1 00) consist in :
- an opening (1 18) for insertion of the animal to be slaughtered obtained on the first longitudinal wall (2a) of the installation (Im) in proximity of said first transversal wall (3a) - a cage (1 1 6) that transversally takes the entire width of said first compartment (100) supported by a raised base (1 17); it being provided that said cage (1 16) is exactly aligned with said opening (1 1 8) and provided with a vertical front wall (1 16a) that can be lifted as shutter
- a window (1 19) obtained on the second longitudinal wall (2b) of the installation (Im) in such a position to provide access to the top of the cage (1 1 6)

- a two-track guideway (107) provided with shearing device, which is hung by means of suitable support means (107a) under said intermediate longitudinal section (104) of the frame provided on the movable ceiling (1 01 )
- a platform (1 23) with central hole (1 23a) situated under said two-track guideway (107) and provided with lifting guide means
- a cabinet (125) with connections for hot water, cold water, sterilizing liquid and electricity.
18) The installation of claim 1 7, characterized in that said means adapted to support said guideway (107) consist in two substantially V-shaped vertical arms (1 07a) respectively fixed under the two intermediate transversal sections (1 05, 106) of the movable ceiling (101 ) of the first compartment (100).
19) The installation of claim 17, characterized in that said guide means of the sliding platform (123) consist in four uprights (1 24) and said lifting means of the same consist in suitable vertical hydraulic cylinders.
20) The installation of one of more of the preceding claims, characterized in that said handling and support means of the animals already cut in pieces mounted on the ceiling (201 ) of said second compartment (200) consist in the first section (61 ) of a guide track (B) also provided with a lateral branch line (61 a) adapted to divert the slaughtered animals towards an unload opening (202) provided in correspondence of the second longitudinal wall (2b) of the installation (Im).
21 ) The installation of one or more of the preceding claims, characterized in that said first partition wall (4) is provided, starting from its lower horizontal border, with a large opening (40) connected on top with a narrow central notch (41 ) adapted to house said first section (61 ) of the guide track (B) mounted on the ceiling of said second compartment (200).
22) The installation of claim 20, characterized in that the unload opening (202) is centrally provided, starting from its upper border, with a narrow notch (202a) adapted to receive the free end of said branch line (61 a) of the first section (61 ) of the guide track (B).
23) The mobile installation of one or more of the preceding claims, characterized in that it is provided with a second partition wall (5) fixed between said longitudinal walls (2a, 2b) in intermediate position between said first partition wall (4) and said second transversal wall (3b) and likewise adapted to generate a third compartment (300) provided with refrigerator unit (302) comprised between said second partition wall (5) and said second transversal wall (3b); it being provided that said third compartment (300) is provided, in correspondence of its ceiling (301 ), with means (62) to support and handle the animals cut in pieces, which are joined and connected with said corresponding means (61 ) provided in the second compartment (200).
24) The installation of claim 23, characterized in that said means provided in the third compartment (300) used to support and handle the animals cut in pieces consist in a second section (62) of said guide track (B); it being provided that said second section (62) is joined and connected with said first section (61 ) of the guide track (B) provided in the second compartment (200).
25) The installation of claim 24, characterized in that said second section (62) of the guide track (B) is sided, with the interposition of a lateral connection branch line (62a), by a third similar longitudinal section (63).
26) The installation of one or more of the preceding claims, characterized in that said second partition wall (5) is provided, starting from its lower horizontal border, with a large opening (50) provided with a thermally insulating door (303).
27) The installation of one or more of the preceding claims, characterized in that said opening (50) of the second partition wall (5) is connected on top with a narrow central notch (21 ) adapted to house said second section (62) of the guide track (B).
28) The installation of one or more of the preceding claims, characterized in that said first compartment (1 00) is provided with a scalding/de-hairing unit (70) contained in a case (71 ) adapted to slide from the inside of the first compartment (1 00) outwards and vice versa through an opening obtained in correspondence of one of said longitudinal walls (2a, 2b) of the installation (Im) in intermediate position between said cage (1 6) and said mobile platform (123); it being provided that said scalding/de-hairing unit (70) is adapted to slide from the inside of the case (70) outwards and vice versa.
