Abstract

The present invention relates to a tea beverage, comprising a green tea extract containing no more than 500 ppm of catechins in all forms and no more than 80 ppm of catechins in gallate form, 100-1000 ppm of an alkali metal hexametaphosphate, and no more than 2400 ppm of a peptide. It also relates to a process for preparing a tea beverage, comprising extracting green tea leaves with water to obtain a green tea extraction liquid including no more than 500 ppm of catechins in all forms, treating the green tea extraction liquid with tannase to obtain a green tea extract including no more than 80 ppm of catechins in gallate form, adding 100-1000 ppm of an alkali metal hexametaphosphate and no more than 2400 ppm of a peptide to the green tea extract. It further relates to a green tea extract and its preparation process.
