  • Food hygiene is fundamental to the quality assurance of food products and is part of all operations related to the handling of any foodstuff; requires proper procedures in the field, processing, distribution and consumption.
  • Handler training programs emphasize the importance of individual and collective health, and include basic notions of personal and environmental hygiene, highlighting the damage that absence! of these precautions cause on the health of the consumer, in order to raise awareness their role in preventing OTD. They also underline the importance of consumers' awareness of their attitudes and the risks of product contamination in later stages of production and distribution, not only to minimize the emergence of OTD, but also to prevent product waste.
