Abstract

Die Erfindung betrifft ein Verfahren zur Portionierung von flüssigem Alkohol auf Basis einer vorzugsweise kugelförmigen Matrixverkapselung mit Alginat als Grundsubstanz, wobei eine aus einer Calcium-Alginat-Verbindung hergestellte Alginatkugel in ein Bad aus flüssigem Alkohol gegeben wird, wodurch eine Verdrängung einer in der Alginatkugel befindlichen Flüssigkeit durch die Aufnahme des Alkohols stattfindet. Erfindungsgemäß wird zur Verbesserung des Bissgefühls in die Calcium-Alginat -Verbindung ein Verdicker gegeben. Weiterhin werden erfindungsgemäß lebensmittelverträgliche Perleffektfarbpartikel hinzugefügt.
