Abstract

En la presente invención se describe un proceso para producir L-lactato mediante la fermentación de lactosuero con Lactococcus lactis subespecie lactis. Dicho proceso contempla la etapa de inocular (a) el medio de cultivo con Lactococcus lactis subespecie lactis, la etapa de producir y acumular (b) el L-lactato en el medio de cultivo y la etapa de extraer (c) determinado volumen de caldo fermentado del reactor biológico. La fermentación en el medio de cultivo se lleva a cabo a temperatura constante en el rango comprendido entre 22 a 29°C, bajo estrictas condiciones anaerobias y a un pH en el rango comprendido entre 5 a 6. Estas condiciones de operación encaminan la ruta homofermentativa de Lactococcus lactis subespecie lactis, evitando así la generación de subproductos diferentes al L-Lactato, y permitir el uso integral de la lactosa, evitando la acumulación de glucosa y galactosa en el medio de cultivo fermentado. Finalmente se recupera el medio de cultivo fermentado del recipiente de fermentación con una concentración de L-Lactato de al menos 20g/l con una pureza óptica mayor al 90%, y con una concentración de no más de 0.3g/l de subproductos diferentes al L-Ácido láctico y/o de alguno de los monosacáridos que constituyen la lactosa.
