Abstract

La présente invention concerne un four (1) utilisable pour la cuisson d'aliments industriels, en particulier de type pain, pizza ou équivalent, comprenant au moins un châssis (2) supportant une enceinte de cuisson des aliments (3) et au moins une chambre de combustion (11) destinée à accueillir au moins un combustible solide en vue d'un transfert thermique en direction de l'enceinte de cuisson (3), la chambre de combustion (11) étant équipée d'au moins une ouverture (13) permettant l'introduction du combustible solide; des moyens (14a, 14b, 14c) d'alimentation en combustible solide (11) de la chambre de combustion (11) servant à l'introduction du combustible solide dans la chambre de combustion (11) une fois atteint un seuil minimum de température dans la chambre de combustion (11) et/ou dans l'enceinte de cuisson (3). Ce four comprend, en outre, des moyens (15a, 15b, 15c) de stockage du combustible solide délimitant au moins une région (17a, 17b, 17c) pouvant accueillir au moins une quantité prédéfinissable de combustible solide, région qui est reliée aux moyens d'alimentation (14a, 14b, 14c) pour l'introduction programmée de ladite quantité dans la chambre de combustion (11).
