Abstract

It is intended to provide a foaming oil-in-water type emulsion, which is excellent in texture, meltability in the mouth and flavor and shows a high emulsion stability, favorable whipping properties and a long shelf life at 30oC without resorting to use of a salt such as a phosphate, an organic acid salt or a carbonate, and a method of producing the same. Further, it is intended to provide a method of producing a foaming oil-in-water type emulsion while preventing the formation of a protein aggregate and sticking of the same in the production line. A foaming oil-in-water type emulsion comprising a fat, a protein and saccharides as the main components, characterized by having a total solid content of from 45 to 70% by weight and containing lactose-free and ash-free solid milk components; and a method of producing the foaming oil-in-water type emulsion as described above wherein the lactose-free and ash-free solid milk components contain casein protein and whey protein and the protein content thereof is 80% by weight or more.
