Abstract

Disclosed is a method for producing an anhydro sugar represented by the general formula (1), (2) and/or (3), which is characterized by heating a sugar in a hydrophobic ionic liquid. An anhydro sugar is useful as a functional polymeric material including: a chemical raw material for a bioplastic having biodegradability, a bio-adhesive agent or the like; a raw material for an anti-cancer agent or an anti-HIV agent; an optical isomer resolution agent; and a sugar-derived, safe medical material produced by using a hyperbranched polysaccharide as a base material. The method enables to produce such an anhydro sugar under mild conditions, in high yield, and in a safe and simple manner.
