Abstract
This invention relates to food and microbiological industries, more specifically, to the growth technology of bakery yeast used for the production of farinaceous food, more specifically, for the production of dough and pastry.
Claims
1. Bakery yeast growth device comprising an industrial fermenter connected to which are at least one device of bakery yeast seed device, an air pump, an air cooling unit, a system of air cleaning and sterilizing filters connected in series, tanks with solutions of mineral components and molasses and a scrubber input for output gas/air cleaning, wherein said industrial fermenter has a cylindrical body expanding towards the top, inside said industrial fermenter a circulation tube with expanded top and. bottom parts is installed vertically at ( 0.2-0.4 ) of fermenter diameter from the device bottom with a circular gap relative to the device body, said circulation tube has windows in the upper cylindrical part, and the main bubbler is located into the gap between the device bottom and the bottom expanded part of said circulation tube comprises, and the bottom part of said gap between the device body and said circulation tube has an auxiliary bubbler connected to said main bubbler via a cleaned and cooled air supply pipeline, wherein the industrial fermenter to circulation tube diameter ratio is from 1 :0.8 to 1 :0.6, and the total free area ratio of aerating air supply openings in the main and auxiliary bubblers is from 1:0.05 to 1 :0.15, further wherein said scrubber is connected to said upper expanded part of said industrial fermenter and has a gas/air flow watering system.
2. Device according to Claim 1, wherein the industrial fermenter to circulation tube diameter ratio is 1:0.7.
3. Device according to Claim 1, wherein the total free area ratio of aerating air supply openings in the main and auxiliary bubblers is 1:0.1.
4. Device according to Claim 1, wherein said fermenter body and circulation tube have temperature controlled jackets for heating/cooling agent supply.
5. Device according to Claim 1, wherein said device comprises three seed culture devices further wherein the working volume of each next tank is in a 1:5 ratio to the volume of the previous tank.
6. Device according to Claim 1, wherein said windows are in the form of 5 -50 cm diameter openings or vertical or horizontal slots 5 - 30 cm in width, wherein their free surface is 2 - 20% of the total circulation tube side wall surface.
