Abstract
L'invention concerne un procédé destiné à accroître la vitesse et l'étendue des fermentations. Selon ce procédé dans la fermentation une souche de levure transformée est utilisée avec une molécule d'ADN contenant une séquence nucléotide qui code une partie de la séquence d'acide aminé pour un transporteur d'alpha-glucoside. La transformation convertit l'hôte transformé afin de posséder une capacité accrue pour le transport de maltose ou de maltotriose, ou les deux par rapport à un hôte non transformé. L'invention concerne également un procédé destiné à préparer une souche de levure destinée à la fermentation, une nouvelle souche de levure et une cassette d'intégration d'ADN.
