Abstract
La présente invention concerne différentes séquences codant le récepteur du sucré et de l'umami chez plusieurs populations humaines. L'invention concerne plus particulièrement plusieurs polymorphismes d'un nucléotide simple (PNS) se présentant dans des exons ou la séquence codante (c'est-à-dire codant des PNS et PNSc) de l'un des trois gènes T1R. Certains PNS provoquent des substitutions d'acides aminés, alors que d'autres introduisent un codon de terminaison de chaîne, ce qui rend un produit tronqué. On pense que les différences dans ces gènes affectent le sens du goût d'individus de façon que l'on suppose que des individus à PNS différents (ou dont les haplotypes diffèrent) perçoivent le sucré ou l'umami (par exemple le Glutamate) d'une façon différente de celle du reste de la population. La possibilité de d'essayer cette information allélique est utile pour la mise au point d'agents de sapidité et d'exhausteurs de goût dans la mesure où l'on peut s'en servir pour définir des groupes et des populations percevant de façon différente les saveurs. Cela permet par conséquent de solliciter les préférences de goûts de ces groupes au niveau moléculaire.
