Abstract

L'invention concerne un dispositif (5) pour pratiquer des entailles dans des produits alimentaires primaires malléables (21), en particulier dans des pâtons. Ce dispositif comprend un dispositif de coupe (10) qui génère un jet de liquide haute pression (20) pouvant être déplacé par rapport au produit alimentaire primaire, par l'intermédiaire d'au moins un ajutage de coupe (17) commutable. Le dispositif selon l'invention est caractérisé en ce que le dispositif de coupe (10) comprend une pompe (11) qui génère une pression élevée, et qui est reliée avec un réservoir de liquide (12), côté aspiration, et avec l'ajutage de coupe (17), par l'intermédiaire d'une conduite de refoulement (13), côté pression. Selon l'invention, la conduite de refoulement (13) comprend une soupape de retour (14) qui s'ouvre dès qu'une pression prédéterminée est atteinte et qui renvoie le liquide (15) se trouvant dans la conduite de refoulement (13), vers le réservoir de liquide (12), par l'intermédiaire d'une conduite de retour (16).
