Abstract

Die Erfindung betrifft ein Verfahren zur Erhöhung des Gehalts an α-amylase-resistenter Stärke (RS-Gehalt) eines Polysaccharids, das dadurch gekennzeichnet ist, daß man das eingesetzte Polysaccharid bei Wasserunterschuß, inkubiert, danach abkühlt, gegebenenfalls trocknet und ein Polysaccharid mit gegenüber dem eingesetzten Polysaccharid erhöhtem RS-Gehalts gewinnt.
