Abstract

L'invention concerne un procédé comprenant une phase d'homogénéisation de la pâte à pain par pression de celle-ci dans une cavité jusqu'à obtention d'une valeur prédéterminée au moyen de purge d'air permettant l'expulsion de bulles d'air et de l'air contenu dans les cavités de la pâte à pain pendant son compactage ; une phase de retour à la trémie de la pâte à pain excédentaire utilisée lors d'une phase initiale de charge, ce retour comprenant une étape de coupe transversale et de séparation de la pâte à pain entre l'embouchure de la cavité et la trémie. La machine comprend, quant à elle, une lame (8) qui peut se déplacer transversalement au moment de l'ouverture (5a) d'une trémie et être mise au niveau de ladite ouverture dotée d'un bord tranchant (8b). On prévoit des moyens de déplacement de ladite lame (8) et des moyens de détection de sa position afin de commander les moyens de déplacement de manière synchronisée avec les mouvements d'autres parties mobiles de la machine.
