Abstract

L'invention concerne un procédé permettant de décolorer au moins en partie un jus de sucre contenant des substances colorantes. Selon ce procédé, on ajoute le volume requis d'ozone nécessaire pour le décolorer au moins en partie et on fait réagir l'ozone au moins avec une partie des substances colorantes dans le jus de sucre, ce qui entraîne une décoloration au moins partielle dudit jus de sucre. A cet effet, le volume d'ozone ajouté correspond à 50 à 400 ppm du sucre contenu dans le jus de sucre.
