Description

Rundmesser Round knife
The invention relates to a circular knife of the type corresponding to the preamble of claim 1.
DE-GM 71 16 979). Andererseits sollen aber auch rotierende Messer darunterfallen, bei denen der Radius der Schneide über den Umfang nicht konstant ist wie z.B. bei einem SpiralmesserThe term "circular knife" is intended on the one hand to encompass circular-shaped knives in which the cutting edge or (in the case of toothed cutting edges) the envelope of the cutting edge is a circle which is coaxial with the axis of the circular disc forming the axis of rotation (DE 40 31 671 C2 and DE-GM 71 16,979). On the other hand, rotating knives should also be included, in which the radius of the cutting edge is not constant over the circumference, e.g. with a spiral knife
(DE 38 33 596 C2 oder US-PS 1 957 623).(DE 38 33 596 C2 or US-PS 1 957 623).
Circular knives of this type are used in cutting machines for sausages, cheese and the like, which are used in the private sector, but predominantly in the industrial sector, for example in butchers, delicatessens, supermarkets and in particular in sausage and cheese factories, in order to produce sliced portions. The circular knives are usually rotatably mounted in a fixed housing, and the clippings are guided radially from the outside against the circular knife on a slide that is movable perpendicular to the axis of rotation of the circular knife. In industrial cutting machines, however, the circular knife is also moved perpendicular to its axis of rotation. Only the relative movement is decisive. The cut material lies with its end face against a stop surface extending perpendicular to the axis of rotation. In order to maintain this system, which is important for the dimensional accuracy of the discs, the clippings are pressed with a certain force parallel to the axis of rotation against the contact surface and against the adjacent flat side of the circular knife. On this flat side there is wear on the circular knife, which from time to time requires regrinding in the cutting machine or a replacement of the circular knife for reprocessing and regrinding it outside the cutting machine. The associated business interruptions are disruptive.
The invention has for its object to reduce the wear of circular knives of the type in question.
This object is achieved by the invention reproduced in claim 1.
Coating with a hard material or with two or more hard material layers, possibly with a different composition and structure, increases the wear resistance of the circular knife considerably. Tests have shown that the service life has been extended two to three times. In addition, there is a self-sharpening effect, in that wear and tear occurs on the side opposite the coating side, i.e. material is removed, but the hard coating essentially remains and is continuously exposed on the cutting edge on the opposite side, so that the cutting edge always determined by the properties of the coating and remains accordingly sharp.
Da die von dem Rundmesser zu schneidenden Lebens it- tel einen korrosiven Angriff auf den das Grundmaterial desExperience has shown that wear occurs in a certain zone of the push-on side of the circular knife, and it is recommended according to claims 2 and 3 to provide the coating in this zone. According to claim 4, the radial extension of the annular zone from the outer edge of the circular knife to the inside should be at least 10 mm. Since the food to be cut by the circular knife is a corrosive attack on the basic material of the
Can exercise round knife-forming steel and in so far as food law provisions must be observed, the coating should consist of a food-resistant hard material (claim 5). A material that can be considered for a coating is tungsten carbide (WC).
It can be advisable to provide a further coating on the first coating in order to achieve the optimum properties with regard to corrosion resistance and edge retention.
Bevorzugt umfaßt die weitere Beschichtung ebenfalls mindestens einen Hartstoff (Anspruch 9).According to claim 8, the further coating can have a surface profile which is smoother than that of the first coating in order to prevent smearing of the material to be cut and the formation of grooved cut surfaces. The further coating preferably also comprises at least one hard material (claim 9).
In der Zeichnung ist ein Ausführungsbeispiel derIn particular, it can comprise a hard material containing titanium and nitrogen, in particular titanium nitride (TiN). In the drawing, an embodiment of the
Erfindung dargestellt.Invention shown.

Fig. 2 zeigt einen durch die Achse gehenden Schnitt in vergrößertem Maßstab;Fig. 2 shows a section through the axis on an enlarged scale;

Fig. 4 zeigt einen Querschnitt durch einen beschichteten Oberflächenbereich in stark vergrößertem Maßstab.4 shows a cross section through a coated surface area on a greatly enlarged scale.
The circular knife designated 100 as a whole in FIG. 1 has a circular disk-shaped knife body 1 with a central centering hole 2, with which the circular knife 100 is placed on the shaft or knife holder of the cutting machine. The circular knife is fastened by means of four screws distributed over the circumference, which are screwed into the bores 3, and can then rotate about the axis A of the circular disk.
A konzentrischen Schneide 8 aufweis .As can be seen from FIG. 2, the circular knife 100 is not flat, but rather is dipped into a flat-conical disk which has a ground cutting bevel 4 with a circular cutting edge 8 concentric with the axis A on the outer edge.
The push-on side of the circular knife 100 is the concave side and is indicated by the arrow 5 in FIG. 2. In the radially outer area there is an annular wear zone 6, the extent of which is indicated in FIG. 1 by the extent of the clip. At least in the wear zone 6, the circular knife 100 has a coating 10 made of hard metal on the push-on side 5, which is indicated by dots in FIGS. 1 and 2 and extends in an annular zone 7 which extends from the cutting edge 8 on the outer circumference of the Circular knife 100 extends further inwards than the wear zone 6. In FIG. 3, a circular knife 100 with a circular cutting edge 8, modified in shape, is indicated, in which otherwise the same reference numbers are used. The difference from the circular knife 100 is that the circular knife 100 'of FIG. 3 has a circumferential shoulder 9 on the concave push-on side, ie the middle part of the knife springs back somewhat. In this case, the width of the annular wear zone 6 corresponds to the distance from the shoulder 9 to the cutting edge 8. The loading Layering 10 with the hard metal is also provided in this area, so that here the radial extensions 6 and 7 coincide.
Die Gesamtdicke 12 der Beschichtung 10 hängt vom Einzelfall, d.h. vom Material der die Beschichtung 10 tragenden Fläche und von dem gewählten Verfahren zur Aufbringung der Beschichtung 10 ab und liegt in demFIG. 4 shows the surface area of a knife body 1, on the surface 11 of which the coating with the hard material, designated as a whole by 10, is applied. The total thickness 12 of the coating 10 depends on the individual case, i.e. from the material of the surface supporting the coating 10 and from the chosen method for applying the coating 10 and lies in the
Embodiment in the order of 10 μ. In the exemplary embodiment, the overall coating 10 further comprises a first coating 13 made of tungsten carbide, the surface 14 of which has a certain roughness due to the process. In order to reduce this roughness, a second coating 15, which consists of TiN and forms a smoother surface 16, is applied to the first coating 13.
The aforementioned layer structure is only to be understood as an example. Other suitable hard material coatings also come into consideration, the selection of which in part also depends on the material of the knife body 1. However, titanium and nitrogen-containing hard material layers are preferred, in particular TiN in various compositions and titanium carbo-nitride.
