Abstract

Procédés et appareil servant à séparer les ailes des carcasses de volailles abattues, par exemple les poulets de chair (2). La carcasse est suspendue par les pattes (4) et transportée par un transporteur jusqu'à une position dans laquelle les ailes (28) sont sectionnées par un dispositif rotatif de couple (60), la carcasse étant transportée le dos tourné vers l'avant et en étant soulevée vers l'arrière et vers le haut par un dispositif central de guidage (10). Les ailes (28) sont accrochées et tirées vers l'extérieur et vers le bas par rapport à la carcasse, et celle-ci passe entre des couteaux de préférence stationnaires (70) adaptés pour percer la peau à proximité de l'articulation radiculaire des ailes afin de mettre à nu les tendons principaux situés entre le corps et les ailes et de serrer la chair de la poitrine contre le corps. Lesdits tendons sont tranchés par les lames rotatives (60) de sorte que les os des ailes se séparent des articulations et que les ailes (28) soient entièrement sectionnées par le passage desdites lames.
