Abstract

Procédé de production d'une gomme à mâcher comportant un édulcorant de stévioside à libération retardée, et gomme à mâcher ainsi produite. L'édulcorant de stévioside à libération retardée est obtenu par modification physique des propriétés du stévioside par enrobage et par séchage. L'édulcorant de stévioside est enrobé par encapsulation, enrobé partiellement par agglomération, piégé par absorption, ou il est traité dans des étapes multiples d'encapsulation, d'agglomération, et d'absorption. L'édulcorant enrobé est ensuite séché et classé de manière granulométrique afin de produire un édulcorant à haute intensité à base de stévioside à libération modifiée. Lorsqu'on les incorpore dans la gomme à mâcher, ces particules sont adaptées pour augmenter la durée de vie de l'édulcorant et/ou pour produire une libération retardée lorsque la gomme est mâchée.
