Abstract

La présente invention se rapporte à un procédé permettant de produire une gomme à mâcher avec édulcorant au cyclamate à libération retardée, ainsi qu'à une gomme à mâcher ainsi produite. On obtient l'édulcorant au cyclamate à libération retardée en modifiant physiquement la propriété du cyclamate par enrobage et par séchage. L'édulcorant au cyclamate est enrobé par encapsulage, partiellement enrobé par agglomération, enfermé par absorption ou traité par des étapes multiples d'encapsulage, d'agglomération et d'absorption. L'édulcorant enrobé est ensuite séché et réduit en particules conjointement de façon à produire un édulcorant à grande intensité à base de cyclamate à libération modifiée. Lorsqu'elles sont incorporées dans la gomme à mâcher, ces particules sont destinées à améliorer la stabilité de conservation de l'édulcorant et/ou à produire une libération retardée lorsque la gomme est mâchée.
