Abstract

On améliore le taux de croissance des animaux de boucherie, ainsi que le rendement et la qualité de la viande qu'ils fournissent en administrant à l'animal avant sa maturation sexuelle une quantité efficace d'un composé stéroïde gonadal femelle, c'est-à-dire un composé d'oestrogène ou de progestagène et de préférence un mélange de ceux-ci, suffisant, pour retarder le développement de la fonction gonadale de l'animal. Cette administration doit être terminée bien avant l'abattage de l'animal, de manière à ce que le composé stéroïde administré soit entièrement retiré du système de l'animal afin que celui-ci, avant l'abattage présente des taux d'hormones naturelles correspondantes situés essentiellement dans les limites normales. Chez les mammifères, l'administration est effectuée de préférence par injection; en revanche, chez les poissons, les coquillages et la volaille, le composé stéroïde actif est incorporé dans l'alimentation usuelle à des taux faibles. Chez les mammifères, ce traitement est de préférence appliqué à des mâles non castrés, mais il peut être étendu aux femelles et aux mâles castrés si on le désire. Pour les poissons, les coquilles et la volaille, l'administration s'effectue sans tenir compte du sexe. Ce traitement augmente de manière significative le rapport viande-graisse, alors que l'agressivité et le développement des odeurs résultant en une coloration de la viande sont supprimés chez les mammifères mâles jusqu'à l'abattage.
