Mush has been sold in bulk in open pans like the ordinary bre d-pans and was s iced off and removed by tiie retailer in quantities desired by the purchaser. This was disagreeable to the dealer, because of the wet and sticky nature of the article which he had to handle in taking it out of the pan and wrapping it, and this operation was unpalatable Moreover, the large open area of the pan furnished a oatchall for impurities that would fall therein andrender the food unwholesome and uninviting to a fastidious taste, and .it also exposed a large area of the goods to the atmosphere, causing the formation of a thick leathery skin by the drying and other atmospheric action, which was ruinous to the mush as a food and soon made it unmerchantable.

Arepresents the cylindrical roll of mush which is preferably made in accordance with the formula set out in my above-mentioned application, of which this is a division, and which is conse elastic nature t an mush as ordinarily made, but is still largely water, being from four to five parts water to one of cereal, and consequently of a moist nature and susceptible to deterioration by exposure to the direct action of the air.
