Be it known that we, Jenn A. OTIs and THoMns BARBER, of Watertown, in the county of Jeierson, and Statepf New York, have invented a new and improved Apparatus for Treating Milk; and we do hereby declare that the following is a full, clear, and exact, description of theconstruction and operation ofthe same, reference being -had to' theannexed drawings, making a part of this specification', in which- Figure l'is a vertical cross-section. This invention is a simple and cheap device for warming mill; in the process of manufacturing cheese, ahd consists in a'furnace, boiler, and milk-tank, so constructed, arranged, and operating, that the heat is applied uniformly at all parts of the tank where it is required, and in such a manner as to utilize all the heat,'andl warm the milk rapidly, withoutvscorching or' injuring it in anydegree. l
In the drawings, A represents a furnace, consisting of a simple invertedlarch, g, of any suitable material,
having a doorat its frontend, and a flat rectangular opening, c, at theuppa'er edge of its rear'or inner end. Around this inverted arch is a jacketror surrounding arch, a a', also inverted in shape,like the former, and having its walls separated from the inner walls a a by a' narrow space, which is filled with water from above. The upper side of the furnace A is closed water-tight, tbc upper side of the. enclosingjacket a is open, and connectedfwith a flat` rectangular boiler, B, of the form and .relative dimensions seen in figs. 1 and 2, so that when such boiler is filled withiwater, the water covers the top ofthe furnace, and iows down between thev walls a a', as shown by the red lines of fig. 1. I 'In connection' vwith this apparatus, we use a milk-tank, E, which tits into the rectangular' boiler, as seen in iig. 1, its bottom .resting in the water, above the flue C, and receiving thel heat communicated therefrom. By
making the flue fiat and wide, as shownyit occupies less vertical space than if it were made round, and therebyV 'Saves material, besides radiating inorcheat. By extending it around'the edge of the boiler, its radiating 'surface is increased, and thevheat is lconducted directly to everypart of the boiler, and communioatedto the water .therein in a uniform and equable manner, so that, the water being uniformly heated, -it in turn uniformly applies .the heat to the milk, preventing the undue heating of any part ofthe latter. l
The whole device is exceedingly simple, cheap, and-convenient of operation, besides accomplishing the results above described quicker und in a better manner than 4by any apparatus hitherto in use for ythe purpose.
We do not claim, as our invention, a furnace surrounded with water, the waterspace and the furnace being connected by pipes with the Awater-space under and around the milk-pan, for we are aware that such device is old, being shown in the patents of H. A. Roe and others. Our apparatus is more neatly and cheaply confV structed vthan such devicesl as Roes, the boiler, furnace, and iiues being arranged much more compactly,lland the whole'costing but a trifle, as compared with the'old devices. In our apparatus, it will be observed, the
boiler and furnace compose but a .single vessel, while the entire heat of the reis radiated from the long con- -eluted pipe, C, -in its course through the boiler. The compact furnace and boiler thus made in the form of a :single vessel, and the convoluted pipe C, when constructed and arranged together as described, constitute the most :important features of` Aour invention. Without these parts, arranged as described, 'we lay no claim to novelty in its constructionpbut with them we have demonstrated, by a long .course of practical experiment, that thcapparatns is superior to all others heretofore brought into use for a similar purpose.
Having thus' described our invention, whatwe claim as new, and desire to secure by Letters Pat-ent, is- The arrangement of the double-walled furnace A, with the boiler Band iues C (herben the furnace is made a part or extension of the boiler, and the ues are convoluted or bent back and forth, as shown, all the said parts being constructed, combined, and arranged in the manner described.
