TO ALL WI-IOMA IT MAY CONCERN:
Be it known that I, EDWIN Gr. BULGIN, of Vienna, in the county' of Warren, and State of New Jersey, "have invented certain new and usefull Improvements in a Safe, Gauge, andCheese-Cutting Apparatus; vand the following is a full, clear, and exact description of the same, reference being had to the drawings accompanying this specication and forming a part of the same, in which- Figure 1 shows a perspective view of my improved safe with thecutting-apparatus and gauge.
Figure 2'shows a front view of the same.
Figure 3 is a sectional view of the same, with a portion of the safe removed to show a cheese in position.
The Aobject of `my invention is to supply grocers and retail dealers of cheesewith facilities for cutting up in a more symmetrical manner, and also for estimating more accurately the Weight of the piece fo be cut off,
so that, according to theweight of the cheese placed in the safe, the proportion of any given quantity of it may be determined by a gauge or inderr.
My invention consists in a new arrangement and Acombinationof peculiar mechanism, applied to a safe for holding cheese for retailing, by which the cheese may be accurately divided by a scale or index, 'and-cut to any desired'weight.
I use, for the bottom of Vthesat'e, a piece of boar'dLcnt-circular, as seen-at A, iig. 1, of such a size as deemed necessary to hold any cheese,and from .two opposite points in its circumference erect two posts, B and C, figs. 2.
and 3, and connect theupper ends by a horizontal beam.
n At a point on the circumference of the board A, midwaybetwcen the postsand C, I place another post, D, and these three posts serve to support the semicircular top or cover E, which covers one-half of the safe. This top E is firmly fixed to the posts B, and C, and the beam which. connects them, and the post D passes yup through it, for purposes hereafter -to be described.
To the beam connecting theposts B and C is hinged the semicircular cover 'F, which is madewith'a light framework of wood and wire cloth, in the same manner as ordinary safes for holding cheese, and can be opened upwards, as seen in figs. 1 and 3, so`as to admit the cheese.

The parts above described forma most perfect safe for keepin and in order to iitit for a cnttervand measurelg-I make use of additional parts.
`A little ahove the bottom ofthe safe I place a'circular table, Lwhich is secured to` the-centre of the bottom,
A, by 'ay bolt or screw, passing through the centre of each,-in such a manner that it is free to turn upon its own centre, being supported by the block b, and three or more friction-rollers c c c,.so that it is free to turn easily in either direction, when desired. Onthis table, I, the cheese is placed, so that its centre will beoverthe centre On the top of the beam connecting the posts Band C, and midway betweenits ends, I place thepost J,=and to the top of this post I pivot the lever d, which works the cutting-knife K, being connected with-it by a. rodho, as shown in iig. 1.. This knife K is made of a thin plate of galvanized steel, and extends from the post D to the post J,sliding'in groovescutin said posts to receive it, 'and is of suiicient vertical length to reach. the table I, and still l'e'ave a portion above the top, E, of the-safe.
In order to allow the knife to pass down, a thin slot is cut in the top, E, and the'groove on the inner face` of the-post D extends down its whole length on to the table I, and bythe action of the lever the knife may be easily and quiclly forced down through any cheese. that may be on the tableI, and as readily withdrawn from the same.

At the right of the knife, on the .top of the cover E, and a. little way from the circumference, I place i; graduated `plate, L, in which slides another plate, M, carrying an index or pointer, e.
The plate L is graduated as desired, and the index e, projectingiover it, enables any number of the equal parte to be read off with aecnracy. e
The plate-M, in addition to the index e, carries a marker, z', figs. 2 and 3, which projects downwards through the cover to the cheese below, and its Objectis to ndicatethe point at which the cut edge of the cheese should be stop'ped, as the table carrying .the cheeseis revolved from left to right, in order that the portion indicated by the pointe;1 e maybe cut oi by the knife K.
' A narrow slit'is cut in the cover, so as to allow this marker,i, to be moved backwards and forwards withthe plate to which it is attached, and a set-screw, L, is u sed to fasten and retain said` plate L at any desired point.
At the left of the knife is the Ascrew f, which passes 'through the cover, and downward to the-top of the cheese,`its lower end being terminated by abroad and iat head or roller, t6 prevent thescheese from beinglited otl the table I by the withdrawal of the knife. i
As checsesfare of diierent thicknesses and diameters, the weight of the wholecheese being` determined, anyiproportional part maybe indicated, so that one, two, three, ve or more pounds or fractional parts of pounds may be determined very nearly, sci that the quantity ordered willbe cut ,in one symmetrical piece, instead of two or three irregular, uncouth-looking pieces. l
Having thus fully described my invent-ion, what I claim as new,.and desire to secure by Letters Patent, is.-
,1. The sliding doors Gr and H, as arranged and combined with a rotary bottom and a cutting-apparatus, for the purposes set forth.
2. The arrangement'and combination of the cutting-knife K, hand-lever` regulating-screwf, with a cheesesafe, as described, for the lpurposes-herein set forth.
3. The graduated scale or index-plate L, the sliding plate M, with vits index-nger e and the marker e', as
connected with a cheese-safaforthe purpose set forth.
