SPECIFICATION forming part of Letters Patent No. 623,839, dated April 25, 1899'.

Be it known that I, JOHN H. SHAW, of New Haven, in the county of New Haven and State of Connecticut, have invented a new Improvement in Meat-Cutters; and I do hereby declare the following, when taken in connection with the accompanying drawings and the letters of reference marked thereon, to be a full, clear, and exact description of the same, and which said drawings constitute part of this specification, and represent, in

My invention relates to an improvement in meat-cutters, the object being to produce a simple, durable, and effective meat-cutter constructed with particular reference to fewness of parts, ease of being cleaned, and general convenience of use.
IVith these ends in View my invention consists in a meat-cutter having certain details of construction and combinations of parts, as will be hereinafter described, and pointed out in the claim.
In carrying out my invention, as herein shown, I form an integral fiat end closure or cap A upon the outer or discharge end of the case or receiver A, the said cap having fiat inner and outer faces and being formed with a centrally-arranged circular bearing-opening A which is encircled by a series of segmental discharge-openings A the inner and outer edges of the side and end Walls of which form cutting edges. The said case A is, as shown, short as to length and formed with an upwardly-extending integral hopper A, with an integral depending stem. A and with two integral feet A A, connected with the said stem by braces A A The lower end of the stem is turned forward and carries a clamping-screw A of ordinary form. However, the
particular construction of the case in the details just .described may be varied as circumstances may dictate, The character of the perforations or openings in the said integral cap A may vary, as other details of the construction of the meat-cutter maybe changed. Here I may state that, in effect, the said cap constitutes a fixed cutting instrumentality. The inner face of the said cap or head coacts with a flat cutting-head B, formed integral with and at the outer end of the screw-like forcer B, which is located within the case or receiver A, the said cutting-head B being circular in general form, fitting closely within the outer or discharge end of the said case or receptacle A, and lying in a plane located at a right angle to the longitudinal axis of the forcer. The flat face of this bearing-head fits closely against and rides upon, so to speak, the fiat inner face of the perforated cap A. As shown, the said forcer B" is formed with a thread B of Very coarse pitch, growing shallow as it approaches the cutting-head B and there branching into two grooves B B terminating in two cutting-notches B B intersecting the head B at opposite points therein and ending in shoulders B B which as the forcer is turned crowd the meat upon the inner cutting edges of the discharge-openin gs A of the integral perforated cap A. The forcer B coacts in the usual mannerwith forcing-ribs A", located within the case or receiver A. These ribs may be varied in location, number, and pitch as desired, and coact with the forcer to move the meat or other material to be out toward the outer or discharge end of the device. An integral centrally-arranged bearing-hub B projecting beyond the fiat cutting-head B of the forcer and fitting in the circular bearing-opening A of the cap, supports the outer end of the forcer. The forcer is also formed at its outer end with a threaded stud B projecting from the center of the said bearing-hub B and receiving a thumb-nut B which is screwed down upon a disk-shaped knife 0, the inner face of which fits closely against and rides upon the fiat outer face of the cap A. The said thumb-nut thus performs the twofold office of securing the forcer in place and of carrying the said knife. The said knife is formed with a circular series of circular cutting-openings C, which coact with the segmental discharge-openings A in the final cutting of the meat. The said knife is also formed with a central opening 0*, adapted to permit it to pass over the threaded stud B and with two coupling-slots C 0 leading out of the opening C and receiving couplingpins C C", mounted in the hub B and provided for locking the knife to the forcer, with which it rotates as the forcer is turned by the handle D, which is applied in any approved manner to the handle-stem formed at the inner end of the forcer, which is also formed at its said end with a circular bearing-head or closure D fitting closely within an assembling-opening D formed in the inner end of the case A.
The assembling-opening D, as its name implies, is provided for assembling the forcer with the receiver and also permits the forcer to be removed therefrom. It is made, with this end in view, slightly larger in diameter than the largest diameter of any portion of the forcer. In the use of the cutter the longitudinal thrust of the forcer will be inward toward the assembling-opening rather than outward toward the discharge end of the case or receiver, the said thrust of the forcer-being received by the circular knife D, which is connected with the forcer through the thumb-nut 3 and the threaded stud 13 projecting from the center of the bearing-hub 11, which projects beyond the flat cutting-head 13 of the forcer.
It will be understood from the foregoing description that meat introduced into the device through the hopper A thereof will be caught by the thread 13 of the forcer I3,which coacts with the forcing-ribs A of the case or receiver in forcing the meat forward into the cutting-slots 13 formed in the flat cuttinghead B of the forcer. The pressure of meat in the rear then forces the meat forward out of the said slots 13 and into the dischargeopenings A formed in the integral cap A of the case. Then as the forcer is turned the meat so entering into the discharge-openings A is initially cut upon the inneredges of the side and end walls thereof, as well as by the inner edges of the cutting-slots B of the cutting-head of the forcer and by the shoulders B of the said slots, which latter in particular crowd the meat upon the cutting edges. The cut meat then passes outward through the openings A from which it is pressed by the pressure from the rear into the cutting-openings C of the rotating knife C, by which it is finally cut, after which it drops away from the device into the receptacle provided for its reception.
\Vhen the inner edges of the perforations C and the knife O become worn, the knife may be reversed face for face, so as to present fresh nnworn cutting edges. For adapting the cutter to cut coarse or fine I may provide it with a set of knives 0 having the sizes of their cutting-openings suitably diiferentiated.
It will be seen from the foregoing description and from the drawings that my improved device reduces the number of parts in a meatcutter to the minimum and that those parts are simple and strong in form. It will also be seen that the device is one that is very easy to take apart for cleaning, and therefore very easy to reassemble.
In View of the changes suggested and of others which may obviously be made I would have it understood that I do not limit myself to the exact construction shown and described, but hold myself at liberty to make such departures therefrom as fairly fall within the spirit and scope of my invention. Thus I may dispense with the knife C altogether and rely upon the cutting action of the flat cutting-head B of the forcer and the flat inner face of the integral cap of the case. By dispensing with the knife 0, I should lose the cutting action of the outer face of the integral cap-head; but the device would be simpler and less expensive and still very effective.
IIaving fully described my invention, what I claim as new, and desire to secure by Letters Patent, is
In a meat-cutter or kindred instrumentality, the combination with a casehaving its inner end formed with an assembling-opening and its outer end closed bya cap made integral with it, the said cap having a flat outer face which is located in the plane of the extreme outer end of the case, and a fiat inner face, and formed with a circular central bearing-opening and with a circular series of discharge-openings grouped around the said bearing-opening; of a screw-like forcer provided at its inner end witha disk-like closure adapted to fit within the said assemblingopening, and formed at its outer end with a flat cutting-head bearing directly against the flat inner face of the said cap, and also formed at its outer end with a bearing-hub having bearing in the said circular bearing-opening of the cap, and with a threaded stud projecting from the center of the said hub, a diskshaped bearing-knife bearing directly against the flat outer face of the said cap and coupled with the said hub for rotation with the forcer, and a nut applied to the said stud, and bearing against the outer face of the knife which it holds in place and which receives the longitudinal thrust of the forcer, which is inward and not outward.
