WILLIAM H. PIERCE. lImprovement in Meat and Vegetable-Choppers. No. 114,594.

dndrt %iata WILLIAM H. .PEIRGFL OF B`ANGOR,MAINE.
Letters Patent No. 114,594, dated May 9, 1871.
IMPROVEMENT IN MEAT AND VEGETABLE-CHOPPERS.
The Schedule rufen-e6 to in these Letters Patent and making part of the same.
To all whom it mag/concern:
Be it known that, I, WILLIAM H. Primes, of Bangor, in the county ofi Penobscot and State of Maine, have invented a new and useful orimproved Meat and Vegetable-Chopper, of which the following isa speciiication.
This invention relates to improvements upon culinary machines employed in reducing meat, vegetables, and other articles of food toa sufficient degree of minute subdivisions for use as articles of food; and
The invention consists, in a tray or receptacle for holding the material to be cut, and a peculiarly-formed knife, arranged upon a vertical spindle, and -revolved by contact with the interior walls of the tray, the spindle vupon which the knife is secured being connected with a hinged adjustable bracket, which is actuated by a spring, which thereby preserves the constant pressure of the knife in a direction radial from the center'V of the tray, as will be hereinafter more fully described.
In the accompanying drawing- Figure'l is a perspective view, and i Figure 2 is a vertical section taken through the axis of the horizontal arm or s weep.
Similar letters of reference indicate corresponding part-s in the several figures.
In the drawing- A. represents the receptacle, which is cylindrical in form, and of asuitable depth for' the use intended.
a is a handle secured to tray or bowl A, as shown, for `convenience in using.
b is a .tube secured. to the vbottom of tray A, as
n Y B is a bracket, the part g being hollow; h is the horizontal part thereof, while part t is fitted to revolve freely in the hollow part of elbow f, a screw-nut, j, litted upon stem t', serving to hold it in p]ace.
k is the cutting-blade, which'is formed with an angle, as if constructed of two intersecting planes, as is plainly shown in figs. 1 and 2.
Thisknife is centrally attached to the vertical spindle l, which passes through the hollow part g-of bracket B, and also through a slot, o, in arm d, as shown,'a cap-nut serving to hold it in place.
n is a spring, one end of which is secured to bracket f, .while the other is secured, by a small piu, p, in tube g, as shown in fig. 1.
lris a scraper, which, following the knife 7c as it passes round the vessel, serves to detach the adhering particles from the sides, in order that the knife may aci;v upon them with greater effect.
As the spindle-l slides freely iu sloto, and elbow f and arm h of bracket B are at an angle with arm j, therefore the tendency of spring it is to press the knife outward or against the side of the vessel, as before stated. 4 In use, the cutting attachment may be raised to any desired height, as spindle o slides freely up and` down in tube b, when, by means of knob e and arxn d, the whole may be rotated relatively to the vessel, whereby knife lc will, b v its contact with the material to be cut, rotate upon its own axis, thereby constantly acting upon and reducing to particles whatever is being cut; and as the rotation goes on the knife and connected parts will slowly move downward, thereby acting on the entire mass. By reason of the peculiar for of the knife it will notrun between the larger particles, but subdivides them with efficient certainty.
Having thus described my invention,-
What I claim as new, and desire to secure by'- Letters Patent, is 1. The angular knife k, substantially as and for the purposes specified.
2. The combination of knife k, bracket B, elbow f, spring n, and lever d, substantially as described and shown.
3. In combination with stationary vessel A, the cutting-knife rotating upon its own axis, and also traversiug the circuit of the vessel, substantially as and for the purposes described and shown.
. WILLIAM H. PEIROE.
