To aZZ whom it may concern: H
Be it known that I,JoNAs CROMWELL, a citizen of the United States, residing at the city of Erie, in the county of Erie and State of Pennsylvania, have invented certain new and useful Improvements in Paring and Slicing Knives; and I do hereby declare the following to be a full, clear, and exact description of the invention, such as will enable others skilled in the art to which it appertains to make and use the same, reference being had to the accompanying drawings, and to the letters of reference marked thereon, forming part of this specification.
My invention consists in the improvements in paring and slicing knives hereinafter set forth and explained, and illustrated in the accompanying drawings, in which Figure l is a top or plan View of my improved paring and slicing knife, a portion of the handle being broken away. Fig. 2 is a sectional View of the same on the line m m in Fig. 1, looking in the direction of the arrow. Fig. 3 is a sectional view of the same, on the line y y in Fig. 1, looking in the direction of the arrow.
The objects of my invention are, first, to construct a paring and slicing knife with a blade pivoted on trunnions on the ends there-- of; second, to provide an adjustable guide adapted to be moved toward or away from the edge of the blade to vary the thickness of the paring or slice, and means for securing the same in place.
In the construction of my improved paring and slicing knife shown in the drawings, A is the handle, and B B are arms secured therein. In the ends of the arms B and B are hearings in which the trunnions of the knife or blade 0 are mounted. This blade 0 is provided with arms 0 and c, which extend backward on a line with the edge of the knife or blade 0, and from the ends of these arms trunnions d d extend laterally and enter the bearings b b in the arms Band B. The end of the arm B is cut away on the inside some to form a shoulder D, with which the arm 0 of the'knife or blade 0 engages as the blade 0 swings downward on the trunnions d and d,
and thereby the downward movement of the blade 0 is limited.
The guide mechanism of my device consists of a plateE adapted to rest upon the tops of the parallel portions of the arms B and B and be moved to and from the edge of the knife or blade 0. This guide is secured in place by means of a clamp-bar F, the ends ff of which extend around under the arms B B, substantially as illustrated in Fig. 2. In the center of this bar F is a thumb-screw F, which contacts with the center of the guide-- plate E, so that when it is screwed down the plate is held firmly in place. On the plate are also projections e e, which contact with the edge of the clamp-bar F, so as to keep it parallel with, the front edge of the guide plate E. On the arm B is also secured a latterally-projecting blade Gadapted to be used by the operater to remove imperfections in the article being pared or sliced.
In'operation the article-for example, a po tato-is held in the hand of the operator or on other convenient support, and the paringknife drawn over it, the guide-plate E having first been adjusted in or out so as to properly gage the thickness of the paring to be removed until the surface of the potato is removed, after which the eyes or other imperfections not removed with the skin can be removed by means of the knife G.
Having thus fully described myinvention,, what I claim as new, and desire to secure by Letters Patent of the United States, is-
The combination in a paring and slicing knife, of a handle A having arms B B therein, a blade 0 having trunnions thereon pivoted in bearings in the ends of the arms B, B, a shoulder D on the end of one of said arms limiting the movement of said blade on its trunnions, and an adjustable guide plate E, substantially as and for the purpose set forth..
