SPECIFICAI'ICN forming part of Letters Patent No. 322,044, dated July 14, 1885.

To all whom it may concern:
Be it known that I, GEORGE B. DAWSON, a citizen of the United States,residing at ONeill, in the county of Holt and State of Nebraska, have invented a new and useful Milk-0ooler and Cream-Raiser, of which the following is a specification.
My invention consists of a wooden tank or box divided into compartments, as shown by the drawing, the several compartments containing ice and water and cans containing milk, the milk-cans being immersed in water in acontinuously-moving current passing over ice contained in the compartments A' A, coming directly in contact with the can containing the milk, drives the warm water out through the overflow, as shown by the arrows. I attain these objects by the construction of the apartments illustrated in the drawing, in which is represented a longitudinal section showing the manner of constructing the tank or box, and the arrangement of the several compartments.
A A are the ice-chambers, containing the ice over and around which the water flows, B B being the boxes or compartments in the principal tank in which the tin cans O O are placed containing the milk to be cooled. The course of the water over and through the ice in the chamber A, through the channel-board F, and around the milk-can O is shown bythe direction of the arrows.
D D on the drawing represent a tin tube in the can containing the milk covered at the top; and E represents on the drawing a tin pipe connecting with such tube and the outer side of the can which contains the milk.
F F represent a channel-board fastened on the bottom of the compartment B,connecting 0 with the lCGChEIHlbGI A, by means of which the icewater is conveyed from the ice-chamber A to the center of the compartment B and discharged under the center of the can 0, from where it rises, completely surrounding the can, expelling the water that has become warm by coming in contact with milk in can 0 the water passing out through the overflow, as shown by the arrows of the drawing.
I am aware that prior to my invention milkcoolers and cream-raising by means of cans having the vertical tube D and connecting pipe, as shown on the drawing, immersed in water contained in boxes, barrels, and tanks, having an inlet and outlet for the water,have been made and used for some time. I therefore do notclaini anything on the vertical tube D or the pipe E, or on the inlet or outlet of the water through the tank only so far as they tend to clearly show the principle of my invention; but
What I do claim as my invention, and desire to secure by Letters Patent, is-
The tank having a suitable overflow and divided into compartments, each provided with a perforated channel-board, and having an ice-chamber between each compartment and connected therewith, as shown and described, in combination with milk-cans, one for each compartment, each provided with a vertical tube closed at the top and a lateral connecting-pipe, each can being so located in its compartment that the open end of the vertical tube is directly over theperforation in the top of the channel-board, substantially as described.
