Specification of Letters Patent.
KNIFE.
ark, in the county of Essex and State of 5 New Jersey, have invented certain new and useful Improvements in Knives; andI do hereby declare the following to be a full, clear, and exact description of the invention, such aswiu enable others skilled in the art to which it' appertains to make and use the same, reference being had to the accompanying drawings, and to figures of reference marked thereon, which form a part ofv this specification.
This invention relates to an improved paring and slicing knife which is formed with a cutting edge on its outside edge and has a slot near .the back thereof, one edge of the slot being bent up and formed into a. paring edge. The paring edge is placed near the back of the blade so that the angle vbetween the slicing edge and the paring edge is much more gradual than if the paring edge was placed near the slicing edge, and in this way there is no abrupt angle to the blade and the slicing is not interfered with by the projecting paring edge.
Another object of the invention is to provide the end of the blade with an extension which is dropped below the blade and is preferably U or V-shaped andv .is adapted for removing spots or defects in fruit or vegetables without interfering or being interfered with by the slicing edge.

The invention comprises a blade 10 which is secured to a handle 11, the blade having one of its edges 12 sharpened to form a cutting edge and to be used particularly as a slicing edge whereby the knife can be used to slice vegetables and, fruits. round and connected by a slot, because the juncture of the edge of the perforation and the edge of the slot forms an obtuseangle, that is, greater than a right angle, and there is not so apt to be a cutting of the fingers by the corner 17 On the end of the blade I provide a U or V-shapedextension 18 provided with a cutting edge 19, this extension being used to remove spots and defects in fruits or vegetables, potato-eyes, and similar parts that are not desirable. The .extension is preferably made integral with the blade and pro-- jects with its cutting edge in rear of the slicingedge of the blade where the extension leaves the blade, but projecting forward to a point approximately in line with the slicing edge, which enables the operator to-extract the defects, spots, etc., by means of the extension without the balance of the blade coming in contact w1th and thus cutting or destroying the object operated upon. The extension dropping below the blade permits its being used without the handle or blade coming close enough to the article being cut, when the extension is being used, to damage the same. If the slot 13 were placed in the center of the blade or hear the slicing edge, when the paring edge 15 was bent out of the line of the blade, it
would make such an abrupt angle as would seriously interfere with. the slicingedge and probably mutilate the slices on account of the blade, passing through the vegetable or fruit, being made so wide or thick oh account ofthis abrupt'angle. Applicant has overcome thisbyplacing the slot and theparing edge near the back edge of the bladef 'I may, if desired, maketh'e device as shown.

Having thus described myinvention, what I claim is 1. A knife comprising a blade having its front edge sharpened and having a narrow substantially U-shaped extension projecting from the end of and beneath the blade with its front 'edge in rear of the cutting edge of the blade, the extension being bent so that its lower portion projects in the direction of the cutting edge of the blade, said front edge of the extension being sharpened.
2. A knife comprising a blade having one edge sharpened and provided near its back edge with separated elliptical. perforations arranged at an acute angle to the longitudi nal axis of the blade, a straight slot connecting the perforations, the inner edge of the slot being bent out of the, plane of the blade and sharpened to form a paring edge, and a substantially U-shaped extension extending below and from the end of the blade, the extension having a cutting edge and being narrower than the blade,
