Abstract
Спосіб отримання мармеладу желейного формового на основі суміші желатину швидкорозчинного з пектином низькоетерифікованим з покращеними функціональними властивостями за рахунок функціональних добавок: альгінату натрію та 2,8 % розчину хлористого кальцію, що включає приготування розчину з цукру, структуроутворювача, внесення альгінату натрію, 2,8 % розчину хлористого кальцію, уварювання, додавання патоки, уварювання, охолодження, додавання кислоти лимонної, барвника, есенції, перемішування, розливання у форми, структуроутворення, охолодження.
