Abstract
The strain of the yeasts Saccharomyces cerevisiae Meyen 1838, M-5 is used for the production of alkohol from the molasses. It is keeped in the collection of Research Institute – Genetics. The collection number - ЦМПМ У-187. The morphological features: the cells are oval, the size of the cells of the 2 days culture on the malty mash is 4.0-4.5 microns. The reproduction is realized by polar budding, once – by the bilateral. On the medium of Gorodkova and gypsum tiles they form a spores, from one to four in the ascus.
