Abstract
A method for producing boiled gingerbread includes boiling wheat flour with invert syrup, cooling the boiled flour, making dough, forming dough pieces, baking, cooling, glazing and pre-drying finished products. At boiling flour with invert syrup carrot puree with increased content of low methylated pectin is added in the amount from 3.5 to 20.0 % of boiled flour weight.
