Abstract

A method for production of pastry with cream using zostera, a stevia extract and carrageenan provides for preparing scalded half-finished products by means of mixing butter, salt, water, wheat flour, boiling the mixture, cooling the mass boiled, adding the m?lange while mixing and kneading dough, forming half-finished products of the pastry as sticks and baking thereof and making the cream. The composition of the cream comprises butter, milk, carrageenan, the dry stevia extract, vanillin and cognac. Then the baked scalded half-finished products are filled with the cream and the pastry is decorated from the outside. While making the scalded half-finished products, at the stage of adding the m?lange, the dry comminuted zostera is supplemented in an amount of 1% of the mass of the wheat flour.
