Abstract
A method for producing protein-mineral concentrate from pads of poultry includes preliminary treatment thereof, shredding, extraction of protein-mineral complex, filtering, concentration and drying. Extraction of protein-mineral complex is carried out in water solution of 2 % citric acid in the ratio of muscle-and-bone mince - water solution as 1:3 under the temperature t=105±2 °С for 30 min.
