Abstract

A process for production of dried yoghurt in capsules provides for cultivation of lactobacilluses Lactobacillus acidophilus in nutrient medium, separation of biomass obtained, mixing thereof with shield medium, freezing, drying by sublimation method and dosing. Strains of Streptococcus thermophilus VKPM-3161 and VKPM B-4463 and Lactobacillus delbrueckii ssp.bulgaricus TIMM 3506 selected according to cholesterol-lowering ability are additionally used. Solid gelatin capsules are used for dosing.
