Abstract
A method for must fermentation from starchy material provides for an anaerobic fermentation in the presence of yeasts in the battery of fermenters, brew selection from the second and third processes along the process of fermenters and its recycling in a head fermenter. For the purpose of increase of specific growth rate of yeasts and acceleration of process before recycling from brew an alcohol products and carbon dioxide are extracted by vacuum fermentation. They are returned into process of must fermentation in fourth fermenter along the process by barbotage through the layer of brew.
