Спосіб автоматичного управління процесом темперування шоколадної глазурі містить регулювання температури шоколадної глазурі в зоні охолодження зміною положення регулюючого органу подачі холодної води з холодильної установки та регулювання температури шоколадної глазурі в зоні підігріву зміною потужності електропідігрівача. Додатково початкову температуру сировини вимірюють, перетворюють та подають на вхід регулятора температури шоколадної глазурі в зоні охолодження.
