Спосіб і пристрій для отримання функціонального продукту з ягід у вигляді пасти з подрібненими насінням і оболонками і продукт, отриманий таким способом. Винахід стосується виробництва пастоподібних продуктів з рослинної сировини, зокрема способів і пристроїв отримання функціональних продуктів з ягід у вигляді пасти з подрібненими насінням і оболонками, збагачених вмістом насіння і оболонок, зокрема поліненасиченими жирними кислотами, жиророзчинними вітамінами, поліфенолами, в т. ч. антоціанами з підвищеною антирадикальною активністю, які недоступні для організму людини при переробці ягід відомими способами. Спосіб отримання засновано на обробці вихідної сировини в гідродинамічних контурах із впливом на сировину пульсацією тиску, турбулентним тертям і розриванням кавітаційних бульбашок з результуючим нагріванням і дозволяє виділити, зокрема, фенольні сполуки з рослинної сировини так, що максимально знижується їх природна схильність до руйнування. Пристрій для здійснення такого способу містить проточний апарат (1), пристрій (5) для видалення повітря з сировини, насос (6); гідродинамічний модуль (7) і відцентровий роздільник (9), які утворюють основний замкнений гідродинамічний контур (8), а також обвідний канал (10).
