Abstract

A process for production of sauce on the basis of mushrooms includes mixing of the components prepared as prescribed up to forming homogenous mass, grating, thermal treatment, straining while adding butter in the sauce finished. The mushrooms (cepes, honey fungi, Boletus luteus) are subjected to freezing at a temperature of -4...-6 °С for 2...4 hours with the following comminution in a slightly frozen state up to a size of particles of 0,5...1 mm. Then mixing of the components is carried out with the following thermal treatment in the MW-field for 5...7 minutes, by grinding the obtained mass in the hot state adding water as prescribed.
