The invention relates to the technology of sugar production. A method comprises heating of beet slices, extracting the sugar from it into the field of omnipresent electric current. Beet slices are heated by the energy of MW-field at the temperature of 45-70°C, and the extracting is carried out at the intensity of electric field 2-12 V/sm.
