Abstract
A method of producing bread products includes the preparation of dough, cutting, baking and drying of rusks plates for cutting individual slices, cooling and packaging. Bread plates are dried to a moisture content of billets 16-18 %, are cut into slices. The final drying to a moisture content of 10-12 % and the cooling of the bread slices before packaging occurs in conditions of vacuum at an absolute pressure of 2-5 kPa.
