Abstract

To provide a method and an apparatus for producing wrapped foods in which the inner material is wrapped with an outer skin material. The production method comprises following steps: a step where a flat outer skin 3 is positioned on the mounting member 34 having the opening part 33; a step where the nozzle member 43 for discharging the inner material 11 is allowed to go down and the outer skin material 3 is pressed to the mounting member 34 with the annular sealing member 47 that is set on the peripheral surface of the nozzle member 43; a step where, when the inner material 11 is discharged from the nozzle part 43 to swell the skin material 3 downward, the bottom part of the outer skin material 3 is supported with the vertically movable supporting means 15 under the mounting member 34; ; a step where the discharging of the inner material 11 is completed and the nozzle part 43 rises up, and the peripheral parts of the outer skin material 3 are gathered to the central part and the gathered parts are sealed with a sealing means 9, and a step for pressing the sealed part to the wrapped food 17 to be collapsed. 200838443 九、發明說明 【發明所屬之技術領域】 本發明,是關於可以連續性地製造出以例如由麵包麵 糰等食品麵糰所作成的外皮材,將例如由餡或果醬等食品 所作成的內材予以包入之結構的食品(產品)的食品製造裝 置。 【先前技術】 以往的食品製造裝置,例如先將由麵包麵糰所成的圓 板狀的食品麵檲(外皮材)成形爲碗狀,再將例如由餡所成 的內材供給至上述外皮材的內部,以上述外皮材將內材予 以包入,如同含餡麵包一般地進行製造包覆食品(例如專 利文獻1)。 [專利文獻1 ]日本特開2 0 0 3 - 0 7 9 3 5 6號公報 【發明內容】 [發明所要解決之問題] δ己載於上述專利文獻1的食品製造裝置’是具備:載 置成形爲圓板狀的外皮材並且將被供給有內材的上述外皮 材的周緣部予以封合的第2閘門;及與上述第2閘門共同動 作以按壓上述外皮材的周緣部之方式來保持的保持手段; 又,上述專利文獻1所記載的食品製造裝置,具備有 :具備能夠上下移動於第2閘門之用以支撐成形爲碗狀的 上述外皮材的支撐構件,並且將上述外皮材成形爲碗狀之 前將上述支撐構件與上述第2閘門之間的間隔調整爲預先 設定好的間隔之支撐間隔調整手段。 然而,上述專利文獻1所記載的食品製造裝置,由於 是在上述外皮材的周緣部被保持的狀態下,利用上述壓入 手段將外皮材的中央部壓入,來讓上述外皮材凹窪至受到 本發明是有鑑於如前述的問題而硏創的,關於申請專 利範圍第1項的發明,是對於具備:具備有複數個閘門片 的閘門部;及具備有配置在上述閘門部下方的開口部的載 置構件;及配置在上述載置構件的下方,用以支撐外皮材 的支撐部;及將內材供給至上述外皮材的大致中央部的內 材供給部;以及控制上述各部的驅動的控制部的食品製造 裝置’其特徵爲:上述內材供給部,具備:擠壓出上述內 材的管嘴構件,以及使上述管嘴構件與上述載置構件進行 相對性接近驅動及開離驅動的昇降驅動部,再者,上述管 嘴構件,一體地具備有在上述管嘴構件的外周與<上述載置 構件共同動作將被載置於上述載置構件的上述外皮材的周 緣部予以壓夾的麵糰按壓構件,從上述管嘴構件將上述內 -7- 200838443 材擠壓出時,上述控制部驅動控制上述昇降驅動部,以使 得具備有上述麵糰按壓構件的上述管嘴構件與上述載置構 件維持在將上述外皮材的周緣部予以壓夾而接近的狀態^ 關於申請專利範圍第2項的發明,是如申請專利範圍 第1項所記載的食品製造裝置,其中,將上述閘門部配置 在上述載置構件的下方,來作爲其特徵。 關於申請專利範圍第3項的發明,是如申請專利範圍 第1或2項所記載的食品製造裝置,其中,具備有使上述支 撐部與上述載置構件進行相對性接近驅動及開離驅動的.昇 降驅動部,且上述控制部驅動控制上述昇降驅動部,以使 得上述支撐部與上述載置構件進行開離同步於從上述內材 供給部擠壓出上述內材的擠壓時機,來作爲其特徵。 關於申請專利範圍第4及5項的發明,是如申請專利範 圍第1至3項中之任一項所記載的食品製造裝置,其中,具 備使上述支撐部與上述閘門部進行相對性接近驅動及開離 驅動的昇降驅動部,並且上述控制部驅動控制上述昇降驅 動部,以使得上述外皮材的周緣部朝中央靠集包覆上述內 材,讓用以支撐於上部形成有突起狀封合部的食品的支撐 部,與由上述閘門部的複數個閘門片所形成的閘門開口部 於閘門片下面爲閉口狀態的閘門片進行相對性接近,使上 述突起狀封合部壓抵於上述閘門片的下面,讓上述突起狀 封合部埋沒於上述食品的上部,來作爲其特徵。 [發明效果] -8- 200838443 根據本發明的食品製造裝置’由於並不是如以往般地 使作爲按壓外皮材周緣部的麵糰按壓構件的保持構件以及 作爲吐出内材的管嘴構件的壓入手段呈開離而設置,而是 使麵糰按壓構件一體地形成在用以吐出内材的管嘴構件的 外周,所以可以把被載置在具有開口部的載置構件上面的 外皮材的周緣部,遍及全周圍地壓夾在上述麵檲按壓構件 與載置構件之間,並且利用上述管嘴構件與麵糰按壓構件 φ 將成形爲碗狀的外皮材的上部開口予以密閉,且在將内材 擠壓到上述外皮材的内部時,由於將上述外皮材的周緣部 維持在壓夾於上述麵糰按壓構件與載置構件之間的狀態, 因而可以防止內材從上述上部開口漏出,而可以防止在封 合上述外皮材的周緣部時上述內材從封合部漏出而製造出 不良品。並且,由於可以防止上述内材污染食品製造裝置 ,所以無須停止上述食品製造裝置的運轉而能夠穩定地連 續生産。 • 並且,根據本發明的食品製造裝置,由於並不是如以 往般地要在夾持住上述外皮材的周緣部的狀態下以上述壓 入手段壓入外皮材的中央部,讓上述外皮材凹窪直到受到 預先配置於下方的支撐構件所支撐爲止來成形爲碗狀,而 是以具備有鍔狀的麵糰按壓構件的管嘴構件在將外皮材的 上部開口予以密閉後的狀態下將内材擠出到外皮材的中央 部,利用内材被擠壓出的壓力使外皮材成形爲碗狀,並且 藉由將載置外皮材的載置構件與支撐外皮材底部的支撐構 件的相對性間隔,以使外皮材的底部一邊接觸於支撐構件 -9 200838443 而一邊開離之方式進行控制,可以抑制成形爲碗狀的外皮 材的底部比其他部分被變薄延展,對於焙燒含餡麵包成最 終產品,上部的外皮材不會有比其他部分極端地變薄之情 形,可以製造出皮層佳的高品質產品。 又,根據本發明的食品製造裝置,在封合外皮材的周 緣部時,由於藉由使閘門裝置與支撐構件相對性地接近來 控制殘留在包覆食品的上部的突起狀封合部,使包覆食品 的上述突起狀封合部壓抵於閘門片的下面而埋入於上述包 覆食品的上部,所以上述突起狀封合部不會殘留在包覆食 品的上部而確實平坦地成形。因此,於包覆食品的表面成 形爲平整的表面而不會有不必要的凹凸。 【實施方式】 [用以實施本發明的最佳形態] 以下,對於本發明的第1實施形態的食品製造裝置1, 使用圖面加以說明。 第1圖至第8圖,是槪略性地顯示食品製造裝置1並且 說明食品製造的製程的說明圖,各圖的(A)是上視說明圖 ,(B)是正視說明圖。又,第9圖是槪略性地顯示在食品製 造裝置1所設置的昇降支撐部1 5的說明圖。 食品製造裝置1,具備有:將例如由麵包麵糰等食品 麵糰所形成的圓板狀的外皮材3進行搬運,並移載至後述 的載置部7上面的所要位置的移載輸送部5;及將上述外皮 材3成形爲碗狀時用以載置上述外皮材3的載置部7 ;及將 -10- 200838443 上述外皮材3的周緣部3 A封合的閘門部9 ;及將例如餡等 內材11供給至上述外皮材3上面的內材供給部13;及配置 在上述載置部7的下方,用以支撐成形爲碗狀的上述外皮 材3底部3B的昇降支撐部15 ;及將利用閘門部9使上述內 材11已由上述外皮材3所被覆後的包覆食品運出的運出輸 送部1 9 ;以及控制上述各部的驅動的控制部2 1。 上述移載輸送部5,具備有:連動且連結於沒有圖示 出的控制馬達的驅動皮帶輪23,前端皮帶輪25,後端皮帶 部33的開口徑還要大,且可以將被載置在載置構件34上面 的外皮材3的周緣部3A以遍及其全周地予以夾持,並與載 置構件34共同動作。又,鍔構件47是使按壓外皮材3的 周緣部3A的麵糰按壓部位47E設成具有凹狀曲面的大致 圓錐形狀。 上述管嘴構件43的下降位置,是可以根據預先輸入於 控制部2 1的設定値來進行調整,例如藉由具備可以偵測出 連動且連結於進給螺桿機構的脈衝編碼器或流體壓缸的進 退桿位置的距離感測器,對上述控制部2 1傳送根據檢測信 號的位置資訊。又,上述內材供給部1 3,是被設置爲可以 根據設定輸入於上述控制部21之關於內材11的擠壓時機及 擠壓量的設定値來進行調整,可以與後述的昇降支撐部1 5 的下降動作大約同步之方式從上述擠出口 45將所需要量的 內材1 1供給到上述外皮材3的內部。 並且,在上述管嘴構件43的內部中央,配設有連通至 9的開閉動作,昇降支撐部15的昇降動作及搬運動作的 經時變化的一例的動作說明圖。尙且,在本實施型態中, 外皮材3雖是以成形爲均一厚度的圓板狀食品麵糰來作說 明,但是例如,藉由將外皮材3的周緣部3 A成形爲比中央 部3D還薄來作爲大致圓板狀的食品麵糰亦可。利用將外 皮材3的周緣部3A成形爲比中央部3D還薄,則可以減少 作爲包覆食品17的封合部17A所聚集之食品麵糰的量,也 可以調整包覆食品1
